A cheese and onion pasty is a classic staple of Cornish cuisine. We love serving them for dinner, with homemade chips and baked beans – a plate of orange food at its finest. But you could just as easily enjoy yours with a quick pickle on a picnic, as they taste great hot or cold. However you eat them, we recommend a good shake of malt vinegar. After something meatier? Yield Makes 4 large pasties

Number Of Ingredients 15

40g unsalted butter
1 medium brown onion, finely diced
1 medium waxy potato (about 250g), cut into 1cm dice
200g cheddar, grated (we used half hafod, half montgomery’s, but anything strong and sharp will do)
2-3 tbsp double cream (optional)
For the pastry
300g plain flour, plus extra to dust
1 tsp salt
200g cold unsalted butter, cubed
1 medium free-range egg, lightly beaten
40ml milk
2 tsp white wine vinegar
1 free-range egg, beaten, to glaze
You’ll also need
Large baking tray lined with compostable baking paper

Steps:

  • To make the pastry, put the flour and salt in a mixing bowl. Rub in the cubed butter between your thumbs and forefingers until the mixture resembles fine breadcrumbs. Stir in the egg, milk, and vinegar using a table knife. Using your hands, work the mixture until it comes together to form a dough – it should be soft but not sticky. Shape the dough into a ball on a flour-dusted work surface, flatten into a disc and cover in cling film. Set aside in the fridge for at least 30 minutes to rest (see Make Ahead).
  • For the filling, melt the butter in a heavy-bottomed pan over medium heat. Add the onions and cook, covered for 10 minutes until softened. Stir regularly and add a little water if they start to look dry. Add the potato to the onions and continue to cook for 5-10 minutes. Remove from the heat and set aside to cool.
  • Heat the oven to 180ºC fan/gas 6. Divide the pastry into 4 equal pieces. Roll out one piece on a lightly floured surface to form a circle roughly 4-5mm thick (keep the rest of the pastry wrapped in the fridge).
  • Stir the cheddar and cream (if using) through the cooled potato mixture, season with a good pinch of salt and lots of freshly ground black pepper (you want the mix to be heavily seasoned). Pile a quarter of the cooled filling on one half of the pastry, leaving a 3cm border around the edge. Brush the edges with a little beaten egg, then fold the other half over and press to enclose the filling. Crimp the edges of the pastry and place on a large, lined baking sheet. Repeat with the remaining pastry and filling. Brush the pasties with the egg, poke with a fork so steam can escape, then bake for 25-30 minutes until golden (see Make Ahead)
  • Serve the pasties, hot from the oven with chips and baked beans, or your favourite pickle if you like.

My mum made the best pasties on earth, but she's gone so I had to make them today from my memories. Pasties were a food we ate when we were poor, so there wasn't much meat in them compared to veg. Swede turnip is very important in pasties. Mum made her own pastry with dripping, but I don't save dripping!

Yield 5 Pasties

Number Of Ingredients 12

1 kg shortcrust pastry, 5 sheets
300 g ground beef
3 medium potatoes, peeled and cut into tiny (pea sized)
1 medium carrot, peeled and grated
1 small swede, peeled and grated
1 medium onion, very finely diced
2 tablespoons peas
2 teaspoons beef stock powder
2 tablespoons water
black pepper, lots of black pepper
1 egg, lightly beaten with
2 tablespoons milk

Steps:

  • Preheat oven to 160c for a fan forced oven or 180c for non fan forced.
  • Seperate pastry sheets and defrost. Using the largest dinner plate that will fit on the pastry square, cut circles.
  • Mix filling ingredients together and divide into 5.
  • Place 1/5th of the mixture along the centre of a pastry circle, then moisten edges with water and bring together crimping to seal.
  • Repeat with remaining 4 circles of pastry.
  • Place on a baking tray and brush with the glaze; cut a small hole in pastry to allow steam to escape.
  • Cook in preheated oven for 45 minutes or until golden.

    1. Preheat the oven to 200ºC/400ºF/gas 6. Line a large baking tray with greaseproof paper.
    2. Peel and finely chop the onion, then trim and finely chop the celery. Heat 1 tablespoon of olive oil in a large frying pan over a medium-high heat, then add the chopped veg. Cook for 10 to 15 minutes, or until golden. Meanwhile, finely chop the mushrooms.
    3. Peel and crush in the garlic, then add the chopped mushrooms. Cook for a further 5 minutes, or until the mushrooms start to soften. Add the mustard and wine, season with salt and pepper, then reduce the heat to low. Cook for 5 to 10 minutes, or until all the liquid has boiled and bubbled away. Set aside to cool.
    4. Add the cooled mushroom mixture and breadcrumbs to a large bowl. Pick, finely chop and add the parsley leaves, then pick in the thyme leaves. Stir well to combine, then season to taste.
    5. Cut the sheets of puff pastry in half lengthways so you have four equal-sized pieces. Spoon a quarter of the mushroom mixture along the middle of one length of pastry, moulding it into a long sausage shape with the back of a spoon.
    6. Brush the almond milk along the pastry edges, then carefully fold one of the long sides of the pastry up over the filling. Press the edges to seal, then crimp with a fork. Repeat with the remaining ingredients until you have four long rolls, then cut each length into four pieces.
    7. Place the rolls on the prepared baking tray, brush with the almond milk and sprinkle over the sesame seeds. Pop on the bottom shelf of the hot oven for 25 to 30 minutes, or until golden, then serve.

I made these using individual 5" disposable aluminium pie tins; however, the ingredients listed would also make a large double-crusted plate pie. Serve them warm or cold with pickles, relishes, chutneys & assorted salads. Also wonderful with hot gravy! The individual 5" pies that have been made here are quite generous, so if you wish, make them smaller than that - maybe in a muffin tin!
