Morning Glory Baked Oatmeal Recipe | Bon Appétit image

This warm and cozy morning glory baked oatmeal studded with carrots, apples, and raisins is the make-ahead breakfast situation your busy mornings need.

Yield 6–8 servings

Number Of Ingredients 18

3 Tbsp. melted unsalted butter, plus more room temperature for pan
1 large egg
Zest of 1 orange
½ cup fresh orange juice
2 cups milk
⅓ cup pure maple syrup
1 tsp. vanilla extract
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
1 tsp. ground cinnamon
½ tsp. ground ginger
2 cups old-fashioned oats
½ cup steel-cut oats
1 cup grated apple (about 1 medium)
1 cup grated carrot (about 1 large)
½ cup golden or other raisins
1 tsp. baking powder
½ cup chopped pecans, plus more for serving
Heavy cream or milk

Steps:

  • Place a rack in middle of oven; preheat to 375°. Butter an 8x8" ovenproof baking dish. Whisk egg, orange zest, orange juice, milk, maple syrup, melted butter, vanilla, salt, cinnamon, and ginger in a large bowl to combine. Add old-fashioned oats, steel-cut oats, apple, carrot, raisins, baking powder, and ½ cup pecans and stir again to combine. Scrape into prepared baking dish and sprinkle more pecans on top.
  • Bake oatmeal until top is golden brown and has puffed up a bit, about 40 minutes. Let sit 5 minutes.
  • Serve warm with a drizzle of cream on top. Do ahead: Oatmeal can be baked 5 days ahead. Cover and chill. Reheat with a splash of milk before serving.

4 cups all-purpose flour
Generous 1/2 cup granulated sugar
2 tablespoons baking powder
4 tablespoons unsalted butter
1/4 cup shortening
1 1/2 to 2 cups sweet orange marmalade (use 2 cups if you like the bitter marmalade taste, less if you don't)
1 cup orange juice
2 teaspoons vanilla extract
3 whole eggs, beaten
1/2 cup granulated sugar
1/4 cup brown sugar
2 tablespoons melted butter
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
Wheat germ, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F.
  • For the muffin batter: Sift together the flour, granulated sugar and baking powder. Place the flour mixture in a mixing bowl. Use a pastry cutter to mix in the butter and shortening.
  • Mix the marmalade, orange juice and vanilla in a small bowl. Pour the marmalade mixture into the flour mixture. Pour the eggs into the bowl. Mix all ingredients together gently, using fewer than 10 large strokes.
  • For the topping: Mix the granulated sugar, brown sugar, butter, cinnamon, nutmeg and salt in a small bowl.
  • Fill muffin pans with batter. Sprinkle 1 heaping teaspoon of topping ingredients over each muffin. Sprinkle 1/2 teaspoon wheat germ over the top for extra crunch if desired.
  • Bake until done, 20 to 22 minutes. Remove the muffins from the pan and cool on a wire rack. Eat warm or at room temperature.
