Mini Waffle Pops with Candy Sprinkles Recipe | Allrecipes image

Move over, birthday cake. These easy mini waffles are the new party sensation. Baked on lollipop sticks and sprinkled with white chocolate and candy sprinkles, they make fun and festive dessert bites.

cooking spray
1?¾ cups all-purpose flour
3 tablespoons white sugar
1 tablespoon baking powder
½ teaspoon salt
1?½ cups milk
3 eggs, beaten
½ cup butter, melted
1 teaspoon vanilla extract
60 lollipop sticks
1 (12 ounce) package white chocolate chips
½ cup candy sprinkles
¼ cup colored sugar

Steps:

  • Grease a waffle iron with cooking spray and preheat according to manufacturer's instructions.
  • Whisk flour, sugar, baking powder, and salt together in a large bowl.
  • Whisk milk, beaten eggs, butter, and vanilla extract together in a separate bowl. Pour over flour mixture; stir until batter is just moistened.
  • Scoop 2 teaspoons of batter into the waffle iron for each waffle pop, leaving space between each one. Insert a lollipop stick 3/4 of the way into each pool of batter. Close lid; cook until golden and crispy, about 1 minute. Transfer waffle pop to a cooling rack. Repeat with remaining batter and lollipop sticks.
  • Melt white chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes.
  • Scoop melted chocolate into a pastry bag fitted with a small writing tip or into a plastic resealable bag with a corner snipped off. Drizzle chocolate over one side of the waffle pops.
  • Sprinkle candy sprinkles and colored sugar over pops while chocolate is still warm. Let cool until chocolate firms up, about 5 minutes.

Leftover mashed potatoes become beautifully golden-brown thanks to your Belgian waffle maker. If you're not serving them immediately, keeping them in the oven ensures that they stay warm and crisp. Bacon is always a fun flavor boost, and fresh chives add brightness and color.

1 1/2 cups prepared mashed potatoes
1 cup unsalted chicken stock
3 large eggs, lightly beaten
2.13 ounces all-purpose flour (about 1/2 cup)
4 teaspoons baking powder
1/4 teaspoon salt
Cooking spray
6 bacon slices, cooked and crumbled
3 tablespoons chopped fresh chives
1/2 cup turkey gravy (optional)

Steps:

  • Preheat oven to 200°F.  Combine potatoes, stock, and eggs in a small bowl. Combine flour, baking powder, and salt in a medium bowl. Add potato mixture to flour mixture; stir just until combined.  Preheat a large, deep Belgian waffle maker according to manufacturer’s instructions. Coat with cooking spray. Place 1/4 cup waffle batter in each of the 4 waffle maker compartments. Gently close, and cook until golden brown, 7 to 10 minutes. Place cooked waffles on a baking sheet; keep warm in oven. Repeat procedure with remaining batter.  Sprinkle waffles with bacon and chives. Serve with gravy, if desired.
