<p>These homemade waffle cones are perfect for holding scoops of your favorite ice cream, as well as for making our <a href="http://www.williams-sonoma.com/recipe/chocolate-dipped-cones.html"><b><u>chocolate-dipped cones</u></b></a>. Be sure to cook each cone for at least 1 minute before lifting the lid of the waffle-cone maker so the batter has time to firm up.</p>

Number Of Ingredients 6

2/3 cup all-purpose flour
1/4 tsp. salt
2 eggs
1/2 cup sugar
4 Tbs. (1/2 stick) unsalted butter, melted
1/4 cup milk

Steps:

  • Preheat a waffle-cone maker according to the manufacturer's instructions. Start with heat setting #3 and adjust as necessary, depending on the desired degree of brownness.
  • In a small bowl, sift together the flour and salt. Set aside.
  • In a bowl, whisk together the eggs and sugar until the sugar is incorporated and the eggs have lightened in color, about 1 minute. Add the flour mixture and stir until incorporated. Add the butter and milk and stir just until combined.
  • Spoon a scant 1/4 cup batter onto the waffle-cone maker. Using a small offset spatula, spread the batter evenly over the surface. Close the lid and cook for at least 1 minute before lifting the lid to check for doneness. Continue cooking until the desired color is reached, 1 1/2 to 2 minutes total on heat setting #4.
  • Quickly remove the waffle from the waffle-cone maker and shape it around the cone roller (included with the waffle-cone maker). Hold the cone for a few seconds to set its shape. Set the cone on a parchment-lined baking sheet.
  • Repeat with the remaining batter. Makes about 10 cones.

1 vanilla bean, split
1 cup butter
1 cup packed dark brown sugar
1 cup egg whites
1 tablespoon vanilla extract
1 teaspoon salt
1?¼ cups all-purpose flour

Steps:

  • Scrape vanilla bean seeds into a small saucepan over medium heat; add butter and cook until melted, 2 to 3 minutes. Whisk vanilla butter, brown sugar, egg whites, vanilla extract, and salt together in a bowl; add flour and beat until batter is smooth.
  • Preheat a waffle cone maker according to manufacturer's instructions.
  • Pour batter into the preheated waffle maker and cook according to instructions.
  • Immediately wrap around a cone-shaped dowel or press into a bowl-shaped mold. Let each cone or bowl cool for a few minutes. Store in an airtight container for up to 2 days.

Place a piece of Saran Wrap on top of flipped cookie and use a waffle cone to roll the cookie around the cone. Transfer to a platter seam-side down and freeze until firm, 1 hour and up to 3 days. Remove waffle cones from cookie cones, then scoop ice cream into cones and serve immediately.

I used to have to make hundreds of these a week at a restaurant called Melange where I was the pastry chef in 1987. We actually served them differently. Dave Jarvis, the chef, had us sauce the plate with caramel or raspberry sauce, place a large scoop of ice cream on the plate and then place the cone, open end down, on the ice cream, like a pointed hat sticking up. It looked very dramatic traveling through the dining room.
