Steps:
- Preheat oven to 375 degrees.
- Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
- Line regular sized muffin pans or cupcake tins with paper baking cups and place a vanilla wafer in the bottom of each cup.
- Fill the cups 2/3 full of cream cheese mixture.
- Bake for 15 to 20 minutes or until set.
- When warm, top each with a tablespoon of cherry filling.
- Chill in refrigerator.

- "PREHEAT OVEN TO 350 -- LIGHTLY GREASE MINI CHEESECAKE PAN Process or crush Nilla Wafers into fine crumbs. Add sugar and melted butter, combining well. Divide among cups and press down. Bake for 5 minutes and set aside. REDUCE OVEN TEMP TO 325 In a large bowl, beat the cream cheese and brown sugar until light and fluffy. Add the pumpkin, sour cream, salt, vanilla and spices. Mix well. Finally, add the egg, mixing just until combined. DO NOT OVERMIX. Divide the filling among the cups, about 3/4 full. Tap the pan to release air bubbles. Bake for 15-18 minutes in a 325 oven. Cool completely on a wire rack and transfer pan to the fridge to chill overnight. Top off with optional whipped cream before serving."
