5 oz canned albacore tuna (drained)
1 tbsp capers (drained)
1 tbsp extra virgin olive oil
1 tbsp red wine vinegar
2 cups arugula
1 cup cooked whole wheat pasta (from 2 oz dry (or GF pasta))
fresh black pepper
1/2 oz fresh shaved Parmesan

Steps:

In a large bowl toss tuna with capers, oil, vinegar, arugula, pasta and pepper.
Divide on two plates and top with shaved Parmesan.

1 cup Duke's Mayonnaise
2 Tbsp. vinegar
1 Tbsp. prepared mustard
1 tsp. sugar
1 tsp. salt
1/4 tsp. pepper
1 8 oz. package elbow macaroni, cooked and drained
1/2 cup sliced celery
1/2 cup chopped green or sweet red pepper
1/4 cup chopped onion
Chopped parsley for garnish, if desired

Steps:

Combine first 6 ingredients in a bowl and stir until smooth.
Add remaining ingredients, tossing to coat well.
Cover and chill for several hours.
Garnish with chopped parsley, if desired.
