Skip all the peeling and chopping with this tasty version starring baby new potatoes.

Provided by Rachael Ray

Number Of Ingredients 7

2 pounds small red-skinned new potatoes
halved
1/2 cup half-and-half
2 tablespoons butter
1 bunch scallions
white and green parts separated and finely chopped
Salt and pepper

Steps:

  • In a large pot, combine the potatoes and enough cold water to cover; bring to a boil
  • Salt the water and cook potatoes until tender, 15 to 20 minutes; Drain and return to the hot pot
  • Add the half-and-half, scallion greens, and butter; Mash and season with salt and pepper

Rachael gives traditional mashed potatoes an easy flavor upgrade this Thanksgiving with parsnips + cheddar and horseradish pub cheese.

2 large parsnips
cubed 1 inch
6 large russet potatoes
peeled and cubed 2 inches
Salt
1 cup milk
1 stick butter
1 tub sharp white cheddar and horseradish pub cheese???
Pepper
to taste
½ cup chives
finely chopped

Steps:

  • Cover parsnips and potatoes with cold water and bring to boil, season with salt and cook until tender
  • ?  Warm milk and butter in small pot
  • Drain and pass parsnips and potatoes through a food mill, put back into pot and stir in milk and butter
  • Add pub cheese, stir to combine and season with salt and pepper to taste
  • ?Top with chives
