Steps:
- In a large bowl or ziplock bag, combine soy sauce, honey, vinegar, and sesame oil. Whisk to combine, until honey is fully dissolved.
- Add remaining ingredients to bowl or bag. Cover or seal and refrigerate at least 1 hour, up to overnight. Flip the bag occasionally to insure even marination.
- To bake: preheat oven to 450°. Transfer chicken and marinade (including green onions, ginger, garlic, and jalapeño) to a large baking dish, arranging chicken pieces in an even layer, skin-side up.
- Bake uncovered for 23 to 25 minutes, basting halfway through until the internal temperature reaches 165°. If you would like crisp skin, increase oven to broil on high, and broil until skin is crisp, 3 to 4 minutes more. (Watch closely; all broilers are different!)
