This hearty, comforting chicken soup is just like mom made—but it’s done in record time thanks to the Quick Cooker.

Number Of Ingredients 12

1 medium onion
2 celery stalks
1 tbsp (15 mL) olive oil
2 cloves fresh garlic
4 medium carrots, peeled
1½ lbs. (700 g) boneless, skinless chicken breasts
8 cups (2 L) Quick Cooker Chicken Bone Broth or chicken stock, divided
5 oz. (150 g) dried wide egg noodles (2 cups/500 mL)
1 tsp (5 mL) salt
½ tsp (2 mL) dried thyme leaves
½ lemon
Optional: chopped fresh parsley

Steps:

  • Cut the onion into chunks. Place them into the Manual Food Processor and process until coarsely chopped. Remove the onion and set aside. Cut the celery into chunks and process until coarsely chopped.Set the Quick Cooker to SEAR and press START. Heat the oil in the inner pot for 3 minutes. Add the onion, celery, and garlic pressed with the Garlic Press. Cook, uncovered, for 3–5 minutes, stirring occasionally.* Press CANCEL.Meanwhile, cut the carrots into thin slices. Add the carrots, chicken, 4 cups (1 L) of the stock, pasta, salt, and thyme, and stir to combine. Lock the lid and select the CUSTOM setting. Adjust the time to 6 minutes and press START.When the timer is up, press CANCEL. Press the steam-release button to manually release the pressure.Remove the chicken from the inner pot and chop with the Salad Chopper.* Select the SEAR setting and press START. Add the remaining broth and heat until the soup reaches a simmer. Return the chicken to the pot. Press the lemon with the Citrus Press and add the juice to the soup. If desired, garnish with freshly chopped parsley before serving.

1/2 lbs boneless (skinless chicken breasts)
1 carrot (peeled and chopped (about 1/2 cup))
1 stalk celery (sliced (about 1/2 cup))
2 oz uncooked extrawide egg noodles (about 1 cup dry)
4 cups Swanson® Chicken Broth

Steps:

  • Season the chicken with salt and pepper. Add the carrot, celery, chicken, noodles and broth to a 6 quart Instant Pot®.
  • Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 5 minutes (timer will begin counting down once pressure is reached- it takes about 15 minutes). When done, press Cancel and use the quick release method to release the pressure.
  • Remove the chicken from the pot. Shred the chicken and return to the pot. Season to taste.

Add the corned beef roast and brown it well on all sides. Add the Guinness to the pot plus enough water to the cover roast completely. Add the onion, garlic, bay leaf, cinnamon, cloves, allspice and pepper. Bring it to a boil. Reduce the heat to low, cover the pot, and simmer for three hours. (Low temperature should keep it at a very gentle simmer; if it doesn't, increase the heat slightly). Add the carrots and potatoes and simmer for another 20 minutes. Add the cabbage and simmer 10 minutes more. Remove the meat, veggies and potatoes to a serving platter. Slice the meat against the grain – it will be very tender – and enjoy it with a nice cold bottle of Guinness! Oven Method:Preheat the oven to 300F. Follow the directions through step 3, then cover and put in the oven for 3 hours. Add the carrots, cabbage, and potatoes and cook for another 30 minutes to 1 hour, or until the corned beef is tender and the vegetables are cooked through. Continue with the recipe at step 5. Crockpot Method:Follow the directions through step 2. Put the meat in the crockpot, add the beer and enough water to cover the roast. Cook on low for 4 hours. Add the potatoes, carrots, and onion to the slow cooker, and continue cooking for another 2 hours. Add the cabbage and cook for another hour, or until the meat is very tender. Continue with the recipe at step 5. Instant Pot Method:Press “Saute” to preheat your IP and set the temperature to “More”. When the word “hot” appears on the display, add the oil. Brown the corned beef brisket well on all sides (cut it in half if necessary to fit on the bottom of the pot). Add the Guinness draught to the pot, then enough water to cover the meat completely. Close and lock the lid of the IP. Press “Manual” and immediately adjust the timer to 70 minutes. Check that the cooking pressure is on “high” and that the valve is set to “Sealing”. When the time is up, allow the pressure to release naturally for 15 minutes, then use the “Quick Pressure Release” to release any remaining pressure. Carefully remove the lid, then remove the corned beef, place it on a cutting board, drizzle it with about 1/2-1 cup of the cooking liquid, then tent it with foil. Discard all but 2 cups of the liquid that remains in the pot. Add the potatoes, carrots, onions, and cabbage. Close and lock the lid of the Instant Pot. Press “Manual” and immediately adjust the timer to 3 minutes. When the time is up, release the pressure using “quick pressure release” and remove the lid. Continue with the recipe at step 5.

You’ll use less liquid here than with our technique for boneless skinless breasts because these breasts will thaw and release water and other liquid into the pot as they cook.Because of the way the bones add a distinct depth of flavor to the meat, bone-in chicken breasts are a great choice if you want to debone and chop the meat for chicken salad and pasta salad, or to slice the meat for sandwiches.
