1 1/2 cups milk
4 egg yolks
3/4 cup sugar
1/3 cup malt drink powder
2 teaspoons vanilla extract
1 1/2 cups whipping cream

Steps:

  • Heat milk and malt powder in a saucepan till the malt powder is dissolved and the mix simmers. Take off the heat.
  • While waiting for the milk to simmer, beat egg yolks and sugar till satiny and batter-like.
  • Pour the milk into the yolk and sugar mix and stir constantly. Return the entire mix to the saucepan over the lowest heat setting.
  • Constantly whisk the mix and do NOT LET IT BOIL. Let it thicken till it can coat the back of a spoon.
  • Strain the entire mix into a large bowl and let it cool for about 10 minutes.
  • Whisk in cream and vanilla extract. Cool and chill overnight.
  • Process according to your ice cream maker.

185 g malt extract
750 ml milk
500 ml double cream
100 g Demerara sugar
50 g soft brown sugar
190 g egg yolk
85 g white sugar
½ tsp flaky sea salt

Steps:

  • Pour the milk, cream, Demerara, and soft brown sugar into a heavy-bottomed pot and bring to a boil.
  • While the milk and cream are coming to the boil, whisk the white sugar together with the egg yolks.
  • Once the cream mixture is boiling, remove from the heat and gradually whisk into the yolk mixture. Take care to add it slowly or the mixture will curdle.
  • Place the pan back over low heat and pour the mixture into the pan. Stir slowly with a wooden spoon or spatula, until the custard thickens to a crème anglaise consistency.
  • Whisk in the malt extract and salt to dissolve, then strain through a fine sieve into a bowl and leave to cool. Once it's cooler, set it aside in the fridge until completely chilled.
  • Place in an ice cream maker and churn according to manufacturers' instructions, then store in the freezer until ready to serve. Enjoy!

Cook over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in cream, malted milk balls and vanilla. Press plastic wrap onto surface of custard. Refrigerate several hours or overnight. , Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer’s directions. (Refrigerate remaining mixture until ready to freeze.) When ice cream is frozen, transfer to a freezer container, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with remaining ice cream mixture.
