At its core a Mai Tai is meant to showcase great rum. In this recipe, we use a combination of white and aged or dark rums for the best of both worlds.

Yield Makes 1

Number Of Ingredients 8

1 oz. aged rum (such as Plantation Original Dark or Denizen Merchant’s Reserve)
1 oz. white rum (such as Denizen aged white rum)
1 oz. fresh lime juice, a squeezed lime half reserved
½ oz. curaçao or Grand Marnier
¼ oz. orgeat (such as L’Orgeat, BG Reynolds, or Liber & Co.)
¼ oz. simple syrup
1 lime wedge
1 large mint sprig

Steps:

  • Combine both rums, lime juice, curaçao, orgeat, simple syrup, and reserved lime half in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 20 seconds. Strain into a glass filled to the brim with crushed ice. Garnish with lime wedge and mint sprig.

If you're after a rum cocktail that's tropical and fruity, a Mai Tai is the one for you! The first recipe was claimed to be invented in 1944.

45 mL

white rum

25 mL

Cointreau liqueur

25 mL

fresh lime juice

15 mL

almond syrup

50 mL

fresh pineapple or orange juice

15 mL

dark rum

Ice

Maraschino cherries, lime or mint to garnish

Steps:

  • Fill a cocktail shaker with ice, and combine the white rum, Cointreau, lime juice, syrup and fresh juice. Shake for around 20-30 seconds until the liquid is really well chilled.  Strain into a glass filled with cubed or crushed ice and top with the dark rum.  Garnish with whatever takes your fancy - we love a maraschino cherry, pineapple slice or lime.

I love Daiquiris and this is basically a classic Daiquiri with a few bells and whistles: orange curaçao, lime juice, almond syrup, amaretto, falernum, white crème de menthe, and absinthe. A whopping ten ingredients but it's more an OTT than a "simple is beautiful" cocktail.
