Chinese shrimp congee (porridge)

1 cup rice
2 L water
10 small-sized shrimps or more if you wanted ( , divined and unshelled, I keep the tail)
1/2 cup minced greens ( , Bok Choy, Yu Choy etc)
Pinch of salt to taste
1 piece of ginger ( , shredded)
Pinch of ground pepper
Green onion ( , minced for garnish)
1 tablespoon cooking wine
1/2 teaspoon cooking oil

Steps:

  • In a small bowl, marinate shrimp with 2-3 ginger shreds, cooking wine and ground pepper.
  • Soak the rice for around 30 minutes and then wash and drain. In a small bowl, marinade the rice with pinch of salt and cooking oil for 10 minutes.
  • In a large pot, bring enough water to boil and then add rice. Use lowest fire to simmer for around 40 minutes until the rice is broken and get a thick soup base.
  • Add ginger and minced greens and continue cooking for 1 minute.
  • Add shrimp in; Turn off immediately the fire until the shrimp becomes red.
  • Garnish with green onion and serve hot with small side dishes like cucumber salad, pickles or fried shallot.

1 lobster
Right amount Green onion ginger

Steps:

  • Wash the rice first, it's best to cook it in a casserole, the casserole porridge is delicious
  • Finely chop the green onion and ginger
  • From time to time, use a spoon to stir in the porridge to prevent it from sticking to the pot and becoming mushy
  • When the boiling water is boiling, put the lobster in it and cook it. The lobster needs to be cut into pieces, and you can cut it as you like. Then put the ginger down, put some salt and cooking wine, let it cook for about 30 minutes, and be sure to stir the porridge from time to time.
  • After 30 minutes, put the onion down and stir. You can drink it. It tastes great

  • Stir the fish sauce into the broth, then taste it and add ½tsp of salt. Ladle 60ml (¼cup) of the broth into the bowl holding the tomalley (and roe, if any), then purée in a blender or food processor (or use an immersion blender). Stir in an additional 60ml of broth, then set it aside. Bring the broth in the pot to the boil and add the bamboo and melon. Simmer for five minutes then add the cooked rice, the scallop and lobster pieces, and the peas. Bring to the boil, then stir in the broth containing the tomalley. Taste the broth and add more salt, if necessary. Ladle the ingredients into individual bowls. Serve with white pepper and the rice cracklings on the side, so everyone can add them to the soup as needed.
