LOBSTER AND WILD RICE SALAD RECIPE - NYT COOKING

Yield 4 to 6 servings

Number Of Ingredients 12

3 1/2 to 4 cups cooked wild rice (see recipe)
2 cups cooked lobster meat cut into bite-size cubes
2 medium-size unblemished avocados
1 tablespoon lemon juice
1/2 cup coarsely, neatly cubed red onion
1 tablespoon imported mustard
2 1/2 tablespoons red-wine vinegar
1/2 cup corn, peanut or vegetable oil
1/2 teaspoon finely minced garlic
Salt to taste, if desired
Freshly ground pepper to taste
2 tablespoons finely chopped parsley

Steps:

  • Put the rice in a mixing bowl, let cool, and add the lobster.
  • Peel the avocados and slice in half. Remove the pits. Cut the avocado into cubes and sprinkle with lemon juice to prevent discoloration. Add the cubes to the mixing bowl. Sprinkle with onion.
  • Put the mustard and vinegar in a small mixing bowl and beat lightly with a wire whisk. Gradually add the oil, beating briskly with the whisk. Add the garlic, salt, pepper and parsley. Pour over the salad and toss. Serve at room temperature.

One of my favorite fried rice dishes with sweet and rich lobster.

Number Of Ingredients 10

2 cups cooked day-old white rice
8 oz lobster tail
2 eggs, beaten
1 cup frozen peas
1/4 cup chopped yellow onion
1/4 cup chopped green onion
1/2 tbsp minced garlic
1/4 tsp ground ginger powder
1 tbsp sesame oil
soy sauce

Steps:

  • Pre-heat a wok or skillet to medium
  • Cut the lobster tail into small bite size pieces
  • Add the oil to the pan and stir fry the lobster for 45 seconds
  • Remove the lobster and add the garlic, ginger, yellow onion, and peas to the pan and cook until tender
  • Push the mixture to one side of the pan and add the eggs. Start lightly scrambling. When the eggs are cooked, add the rice and lobster.
  • Stir fry for 30-45 seconds just to mix well. Add the green onions and remove from pan
