This is a great recipe for the family on the go as it needs very little attention. Choose a brisket that weighs between 4 and 5 pounds, depending on how many you are feeding.

4 pounds beef brisket
salt to taste
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 cup barbecue sauce
1 cup water

Steps:

  • Preheat oven to 325 degrees F (160 degrees).
  • Sprinkle both sides of brisket with salt, pepper and garlic powder. Place in a large covered roasting pan.
  • Cook covered with no water at 325 degrees F (160 degrees C) allowing 1 hour per pound.
  • Before last hour of cooking, remove brisket and slice. Return slices to pan and add barbecue sauce mixed with water. Cover meat with sauce, cover, and cook 1 hour longer.

This is one of my best recipes. It creates a very juicy and tender brisket and is very easy to make. The best brisket to use will have a little fat on it.

3 ½ fluid ounces hickory-flavored liquid smoke
1 (10 fluid ounce) bottle steak sauce
1 tablespoon salt
1 tablespoon fresh-ground black pepper
1 tablespoon garlic powder
1 (3 pound) beef brisket
1 thinly sliced onion

Steps:

  • To make the marinade, whisk together the liquid smoke, steak sauce, salt, pepper, and garlic powder in a bowl.
  • Line a roasting pan with aluminum foil. Place brisket with the fattier-side facing upwards in the center of the pan. Pour half of the marinade over the brisket. Using a food injector, inject the rest of the marinade into the brisket. Seal the brisket in the foil and refrigerate for at least 16 hours.
  • Preheat oven to 250 degrees F (120 degrees C). Open foil and layer onion slices on the brisket. Reseal the foil.
  • Bake in preheated oven for 6 hours. Remove the brisket and slice. Reseal the foil and bake the sliced brisket for 1 hour more.

Depending on the temperature you set your water bath to and the amount of time you leave the meat in it, you can achieve a wide range of textures in the finished brisket.At 135°F / 57°C, brisket will never achieve the fall-apart texture of a traditionally barbecued brisket. Instead, it will soften while still retaining its structure. At 12 hours it's still quite tough. At 24, it it as tender as a New York strip steak. At 36 hours, it's even more tender, and by 72 hours, you'll have brisket that you can cut with a spoon, while still giving you a meaty bite and juicy texture.At 145°F / 63°C, the meat will just barely start to separate into a traditional brisket grain, but it will be a little dryer than at 135°F / 57ºC. This is sort of a temperature dead zone for me: too cool to significantly break down muscle fibers to the point that they shred like traditional brisket, but hot enough that the meat will dry out as it cooks. The fall-apart texture of brisket at 155°F / 68ºC for 36 hours. At 155°F / 68°C, we get much better results than at 145°F / 63ºC. Yes, the brisket will expel a lot of moisture as it cooks, but what it loses in water it gains in tenderness and moisture in the form of more connective tissue breaking down and fat rendering.
