This is called Lion's Head because the meatballs surrounded by bok choy look like a male lion's head with a mane. This is Chinese 'comfort food'. I like to make this on lazy winter Sunday afternoons while watching old movies on TV. When served over steamed rice, this becomes a one-dish meal. This is another of Madame Wong's terrific recipes and comes from the Yangchow area of China.

1 slice ginger
1 green onion, cut into fourths, including green tops
1/2 cup water
1 lb ground pork
1 tablespoon sherry wine
3 tablespoons light soy sauce, divided
1 teaspoon salt, divided
1 tablespoon cornstarch
2 tablespoons cornstarch, dissolved in
4 tablespoons cold water
6 tablespoons peanut oil
1 lb bok choy, cut into 3 inch lengths
1/2 cup chicken stock
1/2 teaspoon sugar

Steps:

  • Pound ginger and green onion with back of knife or cleaver.
  • Put into a bowl with the water.
  • Set aside 10 minutes.
  • Strain green onion and ginger out of the water, reserving water.
  • Put ground pork into a bowl.
  • Add green onion and ginger water, sherry, 1 Tablespoon soy sauce, 1/2 teaspoon salt and 1 Tablespoon cornstarch.
  • Mix well with your hand in one direction.
  • Form meat mixture into 4 large balls.
  • Using your hands, lightly coat balls with dissolved cornstarch.
  • Heat 4 tablespoons peanut oil in a wok.
  • Fry balls one at a time until they are brown.
  • Baste with hot oil to facilitate browning.
  • Remove carefully and set aside.
  • Heat 2 tablespoons oil in the wok.
  • Stir-fry bok choy for 2 minutes.
  • Place meatballs on top of fried bok choy.
  • Add 2 tablespoons soy sauce and stock.
  • Cover and simmer for 1 hour.
  • Add sugar.
  • Bring to boil for 2 minutes.
  • If the gravy is too watery, thicken with a little cornstarch dissolved in cold water.
  • Serve over steamed rice.

1 pound pork ( , you can choose ground one, pork belly or meat on the leg(the ratio between fat and lean should be around 3:7))
4 water chestnut ( , peeled and finely diced)
1 teaspoon salt
1 tablespoon cooking wine
1 teaspoon minced ginger
1 teaspoon minced green onion ( , white part only)
2 large eggs ( , beaten)
2 tablespoon starch
Lettuce for presenting and serving
Oil for deep frying
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 tablespoon sesame oil
1/2 tablespoon sugar
1 cup warm water or broth
2 star anises

Chinese dish, I call it cabbage and meatball soup at home. You can use boy choy instead of napa cabbage. This is a combination of a few variations to this recipe, and the way we like to eat ours. Serve with steaming hot rice for a complete meal. I like to place this in the crockpot (set-it-and-forget-it) and cook it for the afternoon if possible because the longer you cook this dish the more tender and melt-in-your-mouth the meatballs are.

  • To Prep In a mixing bowl, mix pork with water until it is fully incorporated. Add Marinade ingredients, ginger, spring onions, corn starch, chestnuts and eggs. Mix well. Add panko and Lee Kum Kee Pure Sesame Oil, mix until it forms a soft mixture. (Panko and water can be used to adjust the texture.) Form into 8-10 meatballs. To Cook Heat oil in a pan over medium heat. Fry the meatballs until they are browned on all sides. In a steamer, add in water and place a plate of meatballs on the rack. Cover and bring the water to a boil over high heat. Turn to medium heat, steam for 40 mins until the meatballs are cooked through. Boil bok choy and mushrooms till cooked. Place on a plate and top it with the meatballs. Serve immediately with steamed rice.

  • To Prep Make the potato starch flurry by combining the potato starch and water together and mixing. Set aside. In a mixing bowl, combine the pork and the water together and mix. Add in the ginger, water chestnuts, scallion, rice wine, sesame oil and salt. Stir well to combine and then divide in to 5 large meat balls. To help sear the meatballs, dust them lightly with cornstarch. To Cook In a wok or frying pan, heat up the oil over a high heat. When the wok begins to lightly smoke, add in the meatballs and fry until the meatballs have evenly browned. When the meatballs have browned, remove them from the wok and set them aside. Don't worry about if the meatballs are still uncooked as they will be braised. In a steamer, steam the wombok leaves until the leaves are soft and wilted. Remove them from the steamer and set them aside. In a claypot, place some of the wombok leaves on to the bottom to form a base. Add in the meatballs and pour in the stock, soy sauce and sugar. Cover the meatballs with the remaining wombok leaves and cover with the lid. Set the claypot on to a stove and bring to a boil over a high heat before reducing to a simmer and letting braise for 60-90 mins. To Serve When the dish has finished braising, transfer the meatballs on to a serving plate and garnish with the wombok leaves. Retain the braising liquid and add in the slurry to thicken the broth. Spoon the thickened broth on to the serving plate and garnish with spring onions.
