This lime jelly is sweet with bursting lime flavor. I only make this when I can get the limes on sale. Don't use too much food coloring as it will look artificially green. Found this recipe on-line.

Yield 5 half pints

Number Of Ingredients 5

2 1/2 cups prepared lime juice (6 to 8 limes)
1 3/4 cups water
4 cups sugar
1 drop green food coloring
1 (3 ounce) envelope liquid pectin

Steps:

  • Grate the peel of 5 of the limes; set aside.
  • Squeeze enough juice from 6 to 8 of the limes to measure 3/4 cup; pour juice into medium bowl.
  • Add lime peel and water; mix well. Place three layers of damp cheesecloth over a medium bowl. Pour juice mixture into cheesecloth. Tie it closed and let drip into bowl until dripping stops, about 10-15 minutes. Press gently. Measure exactly 2-1/2 cups prepared juice into a 6-quart pan.
  • Stir sugar into the juice in the pan.
  • Add food coloring if desired.
  • Bring mixture to full rolling boil on high heat, stirring constantly.
  • Stir in pectin. Return to full rolling boil and boil exactly 1 minute.
  • Skim off any foam.
  • Ladle into jars, seal and process 8 minutes.

400 grams jam sugar (2:1 ratio)
200 milliliters dry white wine

Steps:

  • Rinse the limes in hot water. Remove the zest from 1 lime. Halve and squeeze the juice from the remaining lime. Bring the lime juice, lime zest, sugar, wine, and 600 ml (approximately 20 ounces) of water to a boil. Cook for 4 minutes, then divide the jelly into the prepared jars.
  • Seal tightly, turn upside down, and let cool for 10 minutes. Turn right side up and store in a cool, dark place.

  • Prepare and heat a boiling water bath kettle and wash and sterilize 5 or 6 half pint jelly jars then keep warm; wash lids and rings and set aside. Measure all ingredients before beginning to cook. Mix lime juice, sugar, and water in a 4 1/2 quart saucepot; stir well until blended. Place over medium heat and bring mixture to a boil stirring occasionally, especially in beginning to dissolve sugar. Stir in pectin, lime zest and mint leaves. Bring to a heavy boil (a boil that canâ??t be stirred down) and start timing, stirring constantly for 30 seconds. Remove from heat, skim foam bubbles from top if any. Pour jelly through a sieve to remove mint leaves and any large lime gratings. Ladle into prepared hot jars, wipe rim and seal.
