100 g butter (softened)
1 tin anchovy fillets (drained and finely chopped)
1 garlic (crushed)
0.25 lemon

Steps:

  • ANCHOVY BUTTER MAKES A DELICIOUS ALTERNATIVE TO A MARINADE, ADDING A UNIQUELY RICH, SALTY FLAVOUR WHEN MELTED OVER GRILLED MEAT, POTATOES OR STEAMED VEGETABLES. ANY LEFTOVERS WOULD BE DELICIOUS SPREAD ACROSS CRISPBREADS AS AN ELEGANT STARTER. * Drain the anchovies and grind in a pestle and mortar (or food processor) with the garlic and lemon juice to form a paste. * Mix through the softened butter, beating with a wooden spoon until evenly combined. * Spoon the butter onto a large piece of cling film and roll it up to form a sausage shape. Wrap tightly, then refrigerate until firm. * Once firm, unwrap the anchovy butter and cut into slices. * Make individual slabs of butter for a barbecue or dinner party spoon the butter into a clean ice cube tray and chill until set. You could even make different flavours so everyone can choose their flavour. Some of our favourite ideas are: GARLIC BUTTER-combine crushed garlic with finely chopped fresh parsley MUSTARD BUTTER- add wholegrain mustard to taste (for extra heat, stir in a little English mustard, too) JALAPEÑO - mix chopped coriander with jalapeño sauce to taste

120 g Dark Chocolate
350 Sugar
2 tbsp Cocoa Powder
1 tbsp Vanilla Extract
125 g Flour
30 Icing Sugar
130 g Peanut Butter
250 Butter
3 Egg

Steps:

  • 1 Preheat the oven to 180°C/160°C fan/gas mark 4. Line a 23cm square baking tin with tin foil and spray with cooking spray. 2 Place the chocolate and butter in a large, microwave-safe bowl. Place in the microwave and heat on high power for around two minutes until the chocolate has melted completely, stirring every 30 seconds. 3 Add the sugar, eggs, vanilla and cocoa and stir well to combine. Add the flour and stir again. Pour the batter into the prepared tin. 4 In a bowl, stir together the peanut butter, melted butter and icing sugar. Drop spoonfuls of the swirl mixture over the top of the brownie mixture, then use the tip of a butter knife to swirl the two together. 5 Bake for 25-30 minutes until a toothpick inserted into the centre comes out clean. Allow to cool, then slice into individual brownies.

  • COOKS NOTES: the peanut butter can easily be replaced for almond butter here. Slightly undercooking the cookies here allows for a really fudgy centre but crisp outside so don’t be alarmed if they’re a little soft coming out of the oven. EQUIPMENT: baking trays, stand along mixer Preheat oven to 180°C/350°f/gas mark 4 and line two large baking trays with parchment paper. Beat 100g of the granulated sugar with the light brown sugar and butters together in a stand alone mixer until smooth and softened. Add the egg along with the flour and baking powder and mix until the dough comes together. Divide the mix into 20 pieces and shape into balls, roll in the remaining 50g granulated sugar, placing on the trays as you go, leaving space in between each to allow for a little expansion. Bake in the oven for 10 minutes or until golden, but still a little soft to touch. Remove from the oven and immediately press two maltesers into the centre of each cookie, pressing down a little toindent the middle, allow to cool on the tray for about 10-15 minutes and then place on a rack to cool completely. Melt the milk chocolate and white chocolate in two separate bowls over a bain marie or in 30 second blasts in a microwave, once melted, allow to cool for 5 minutes or until they have thickened a little. Place the chocolates into two seperate, small piping bags, firstly pipe ‘eyes’ onto one of each malteser on each cookie. Place in the fridge for 5 minutes to harden. Remove and pipe ‘eyeballs’ onto the whites followed by 6 ‘legs’ onto each cookie to create a spider. Refrigerate for another 5 minutes to harden or leave to harden on the cooling rack.

  • 1. Split the vanilla pod lengthways, scrape out the seeds and add to a medium saucepan. Pour the cream and milk into this and bring to a steady simmer. 2. In a medium sized bowl, whisk together the sugar and eggs until the sugar has dissolved. Slowly whisk the warm milk mixture into this and then return both to the pan, before placing over a low to medium heat. 3. Cook for 5 minutes over a gentle heat until the mixture has sligthly thickend. It should lightly coat the back of a spoon. Once it has reached this point, stir through the cream liqueur. 4. Butter a ovendish and arrange the bread in it. Evenly disperse the mincemeat in a few dots across the dish. 5. Pour over the custard mixture and leave to soak for at least 2 hours. When ready to bake, sprinkle over the demerara sugar. 6. Preheat oven to 180°C. Pop in the baking dish on the middle rack. Bake for 25-30 minutes until golden.

  • A great recipe when time is tight, this cheesy butter bean bake makes a great midweek or weekend meal - especially when paired with a glass ofAustralian Chardonnay. Serve with two portions of your favourite vegetables. * Preheat the oven to 220ºC/ 180ºC fan/gas mark 7. In a large saucepan, add the bacon lardons and fry for 5-8 minutes on a high heat until crisp and golden. Set the bacon aside onto kitchen roll and drain off excess fat from the pan. Add the butter and melt on a medium heat and add the onion. Gently fry the onion for 5-8 minutes until soft then add the flour. Mix everything together to make a thick paste-like consistency. * Season and slowly stir in the white wine. Then start adding the milk, stirring all the time. Keep stirring until it comes to the boil and has thickened. Stir in the spinach and kale in batches. Once wilted add the peas, mustard and cheddar, slowly simmer until melted. * Add the butter beans and stir in most of the cooked bacon and half the sourdough chunks. Season to taste then pour into the 2l oven proof dish. * Top with the remaining sourdough chunks (gently push them into the sauce), mozzarella and remaining bacon. Bake in the oven for 20-25 minutes until golden and bubbling.
