1/2 cup parmesan cheese grated
2 eggs
1 cup mozzarella cheese shredded
1/2 teaspoon garlic powder
1/2 teaspoon basil
1/3 cup chopped pepperoni slices

Steps:

  • Start by preheating your oven to 350 degrees.
  • In a stand mixer add in your two eggs and beat until they are light and frothy. (If you don't have a stand mixer, you can mix by hand.)
  • Then add in your garlic powder, basil, and parmesan cheese along with mozzarella. Mix until it is well incorporated.
  • Then fold in your chopped pepperoni with a spatula, making sure not to overmix.
  • Spoon your cloud bread pizza onto a parchment lined baking sheet. You will get four round shapes out of the dough.
  • Bake for 10-15 minutes or until the cloud bread is browned and cooked through.

Add cream of tartar and salt to egg whites, then using a hand mixer, beat until stiff peaks from, 2 to 3 minutes. Add cream cheese to egg yolks, then, using a hand mixer, mix yolks and cream cheese until combined. Gently fold egg yolk mixture into egg whites. Divide mixture into 8 mounds on prepared baking sheet, spacing them about 4” apart. Bake until golden, 25 to 30 minutes.  Immediately sprinkle each piece of bread with cheese and bake until melty, 2 to 3 minutes more. Let cool slightly. Into the egg yolk mixture, add 1 tablespoon Italian seasoning, 2 tbsp shredded mozzarella or grated Parmesan, and 2 teaspoons tomato paste.
