A classic Easter favourite, this saddle of lamb is stuffed with crunchy shallots, garlic and pancetta for a depth of flavour guaranteed to please your guests

1 boned saddle of lamb weighing approx 1.5kg/3lb 5oz, skirts removed (ask your butcher to do this for you)
2 rosemary sprigs
1 tsp olive oil
50ml white wine vinegar
25g butter
4 banana shallots , finely chopped
2 garlic cloves , crushed
50g pancetta cubes
small pack flat-leaf parsley , roughly chopped
6 sage leaves , torn
1 tsp grated lemon zest
50g fresh white breadcrumbs
1 egg yolk

Steps:

  • First, make the stuffing. In a large pan, melt the butter over a gentle heat and add the shallots. Cook slowly for about 10 mins until softening, then add the garlic and stir to combine for 1 min. Turn up the heat and add the pancetta and a little seasoning. Cook until the pancetta is crisp, and the shallots are tender and turning golden. Take off the heat, add the rest of the ingredients and stir to combine (it should not be too wet, as the stuffing should absorb some of the lamb juices when cooked). Set aside to cool.
  • Heat oven to 200C/180C fan/gas 6. Lay the lamb saddle out on a board, fat-side down. Arrange the stuffing in a line down the middle, bring the sides up and roll into a large sausage shape so the stuffing can only be seen at the ends. Using string, tie the saddle, tucking the rosemary under the string, then rub with salt and a little pepper.
  • Heat the oil in a large pan over a high heat and place the rolled lamb in the pan to seal the outside, turning every minute or so, until golden – about 6 mins. Remove from the pan and place in a roasting tin. Pour the vinegar over – this will help to crisp the skin – then cook in the oven for 1 hr. Leave to rest for at least 10 mins on a board covered loosely with foil.

1 (4- to 5-pound) saddle of lamb
1 teaspoon salt
¼ teaspoon pepper
½ cup all-purpose flour, divided
2?½ cups boiling water, divided
1 beef-flavored bouillon cube
3 tablespoons chopped fresh mint leaves
2 tablespoons vinegar
¼ cup butter or margarine
Fresh mint leaves (optional)

Steps:

  • Sprinkle lamb with salt and pepper; dredge in 1/4 cup flour. Place lamb, fat side up, in a large Dutch oven. Add 1 1/2 cups boiling water. Cover and bake at 350° for 1 1/2 hours or until lamb is tender, basting occasionally with pan liquid. Transfer lamb to a warm serving platter, reserving pan liquid; keep warm.
  • Dissolve bouillon cube in remaining 1 cup water in a small mixing bowl; add chopped mint, vinegar, and reserved pan liquid, mixing well. Set aside.
  • Melt butter in a saucepan; cook until golden brown. Add remaining 1/4 cup flour, stirring until smooth. Cook over medium heat 1 minute, stirring constantly. Gradually add mint mixture. Cook over medium heat, stirring constantly, until thickened and bubbly. Strain. Serve sauce with lamb. Garnish with fresh mint leaves, if desired.

  • Wash and dry the meat and season with salt and pepper. Trim the leeks and spring onions and cut into rings. Peel and finely chop the garlic. Heat 1-2 tbsp oil and sweat the leeks, spring onions and garlic until the leek is soft but still retains a little bite. Season the leek and spring onion mixture with salt and pepper and stir in the mustard and chopped rosemary. Open out the meat, stuff with the mixture and then close the meat up around the stuffing. Tie with string. Heat the rest of the oil in a flameproof roasting tin on the hob and brown the meat on all sides. Peel the carrot, onion and celeriac and cut into pieces. Wash and roughly chop the parsley. Add the vegetables and tomato puree to the roasting tin and cook briefly, then add the parsley and stir in the wine and stock. Add the rosemary and put into a preheated oven (180 °C with top and bottom heat) for about 60 minutes, or until the meat is done. Then take the meat out of the oven and allow to rest for 10 minutes. Strain the sauce through a sieve, catching the liquid, season to taste and thicken with cornflour if you wish.

Here is not a classic lamb recipe that you see too often.  Here you take the lamb saddle also called the t-bone or loin., and de-bone it. Next, you tie or truss the two loins. back together.  You can easily adding a stuffing in the middle, but I didn't go that route for this recipe.  Today some of the most common cuts of lamb you wil find in stores, is the shank, rack of lamb, and t-bone steaks, that is cut across the bone with a ban saw.  But, if you can find them whole to do this recipe or ask a specialized butcher who could easily do this for you. I made a horseradish jam to pair with the lamb. I added a celery root puree and some broccolini to round out the dish. The curve ball in this recipe was with a quinoa and nori, and cocoa "soil".  This was definitely the most unsual combination I've ever put together, but I wanted to make a "soil" that was dark.
