Pareve (Non-Dairy) Caesar Dressing - Jamie Geller image

Vegan friendly caesar dressing that really make the lemon and garlic shine, for the perfect salad dressing, delicious on kale or Romaine and so much more.

Yield ½ cup

Number Of Ingredients 8

1 clove garlic, finely chopped or grated
1 lemon, juiced
1 teaspoon Worcestershire sauce (can use anchovy paste if preferred)
1 teaspoon Dijon mustard
2 tablespoon low fat mayonnaise
¼ cup extra virgin olive oil, such as Colavita
Kosher salt to taste
Freshly cracked black pepper

Steps:

  • 1 In a small bowl combine grated garlic, lemon juice, Worcestershire and Dijon.2 Whisk in mayonnaise, then whisk in olive oil and add salt and pepper to taste.  Store in fridge until ready to serve.

The best way to get great flavor in your caesar dressing is with fish sauce, try this version for the best caesar salad ever.

Provided by Jamie Geller Test Kitchens

Prep Time 10 minutes

Yield 1 cup

Number Of Ingredients 7

1 large egg 
1 garlic clove
2 tablespoons lemon juice
2 teaspoons fish sauce
½ cup extra virgin olive oil
Kosher salt
Freshly cracked black pepper

Steps:

  • 1. Place the first 4 ingredients into a blender and pulse until garlic is finely minced.  2. With the blender running on a slow speed, remove the top plug from blender lid and very slowly stream evoo in. When all oil has been added, turn off the blender and taste the dressing. Add salt and pepper to taste and pulse to combine.  3. For an egg-free dressing: Replace egg and oil with ¾ cup of mayonnaise. Blend mayo, garlic, lemon juice, and fish sauce in the blender until garlic is chopped. Add salt and pepper to taste, and pulse to combine.  CLASSIC SERVING:  Romaine lettuce, homemade croutons and shaved Parmesan

  • Adding drop by drop to start and whisking constantly, drizzle a few drops of oil into yolk mixture. Continue, going slowly, until mixture looks slightly thickened and glossy. Continue to whisk, gradually adding oil in a slow, steady stream until all oil has been used and mixture looks like mayonnaise. Add a dash of water and whisk, adjusting with more water if needed, until dressing is the consistency of heavy cream. Add anchovy mixture and Parmesan and whisk until smooth. Taste and adjust seasoning with salt, if needed.
