250 grams Pastry flour
60 grams sugar
125 grams cold butter
1 pinch salt
Parchment paper
dried Legume
1 teaspoon cornstarch
200 milliliters milk
5 tablespoons sugar
2 sheets white gelatin
1 egg
1 egg yolk
100 grams Whipped cream
7 Kiwi
0.5 package clear Pie glaze
1 tablespoon sugar

Steps:

  • For the dough, place the flour on the work surface, mix with sugar and salt and make a well in the center of the flour. Cut the cold butter into small pieces and distribute over flour. Add the egg to the well and combine the ingredients with a knife, chopping well into a crumb-like texture. Quickly knead into a dough with your hands, form into a ball, wrap in plastic wrap and chill for about 30 minutes.
  • Roll out the dough on a floured surface, place in a greased tart pan and form an edge.
  • To blind bake, cut parchment paper to the size of the pan, place over dough and top paper with dried beans. Bake in a preheated oven 180°C (approximately 350°F) about 35 minutes.
  • Remove beans and parchment paper, let cool slightly, then remove from the pan and let cool.
  • For the caramel cream, stir cornstarch with 3 tablespoons milk until smooth. Melt sugar in a saucepan and caramelize until golden. Whisk in the remaining milk and let cool. Soak the gelatin in cold water. Combine cornstarch, egg and egg yolk and stir into the milk caramel. Cook over medium heat, stirring until the mixture almost boils. Remove from heat and continue stirring for 2-3 minutes. Dissolve gelatin in the caramel cream. Place caramel cream over an ice water bath and stir until it pulls away from edges of the pan. Whip the heavy cream until very stiff. Beat caramel cream until smooth and fold in the whipped cream. Spread cream on the crust and refrigerate about 30 minutes. For the topping, peel kiwis, cut into slices and place on tart in an overlapping pattern to cover the caramel cream. Prepare glaze according to package instructions and brush over fruit. Slice and serve.

1/2 teaspoon vanilla
3 firm-ripe kiwi fruits, peeled and thinly sliced

Steps:

  • Put oven rack in middle position and preheat over to 450°F Fit dough into tart pan, leaving a 1/2 inch overhang, then fold overhand inward and press against the side of the pan to reinforce edge. LIghtly prick bottom and side of shell with a fork. Line shell with foil and fill with pie weights. Bake until edge is pale golden, about 10 minutes. Carefully remove foil and weights and bake shell until golden all over, about 5 minutes more. Cool shell in pan on a rack, about 20 minutes. Meanwhile, beat together cream cheese, sugar, milk, zest and vanilla in a bowl with an electric mixer until creamy and smooth. Spread cream cheese filling in cooled shell and top with kiwi slices. Cover and chill before serving.
