Steps:
- For the cake: Preheat the oven to 350 degrees F and grease and flour one 9-by-12-by-2-inch cake pan.
- In a large mixing bowl, mix the gelatin, granulated sugar, flour, salt, baking powder and baking soda. Stir to mix well. Add the oil, orange juice, lemon juice, vanilla, and eggs. Mix until well combined. Pour the batter evenly in the pan and bake for 35 to 40 minutes. Test for doneness by lightly touching the tops or inserting a toothpick. Cool the cake in the pan for 5 minutes then turn out onto a cooling rack.
- For the glaze: While the cake is still hot, mix the lime juice and confectioners' sugar together well. Pierce the cake with a fork to allow the glaze to soak in better and pour it over the cake on the cooling rack. Allow cake to cool completely as you prepare the icing.
- For the icing: Cream the butter and cream cheese. Beat in the confectioners' sugar until mixture is smooth and easy to spread. Spread the icing on the top and sides of the cake.

I made this cake a few times for family gatherings, and for my husband. Everyone thoroughly enjoyed this cake and wanted more. This cake is soooo good because it is made from fresh key limes and from scratch.

- Preheat oven to 350 degree and flour 3 9-inch-round cake pans. In a large bowl, mix gelatin, sugar, flour, salt, baking powder, and baking soda. Add the eggs, oil, orange juice, lemon juice, and vanilla. Divide batter evenly among the 3 pans and bake for 35 to 40 mins.Test for doneness,cool layers in pan for 5 mins., then turn onto racks. While layers are still hot, mix the lime juice and confctioners' sugar and pour over the layers on the racks,. You can pierce the layers with a fork and allow the glaze to soak in better. Let layers cool completely before icing.
- Cream butter and cream cheese, beat in confectioners' sugar until mixture is smooth and easy to spread. Spread icing between layers and on top and sides of cake. Cream cheese icing is optional. Cake is beautiful and taste great with just the glaze. I prefer icing the cake.

- In a small bowl, mix crushed cookies and butter. Press onto bottom and up sides of a greased 9-in. deep-dish pie plate. In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar and extract; beat until stiff peaks form. In another large bowl, beat cream cheese, condensed milk and lime juice until blended. Fold in 2 cups whipped cream. Spoon into prepared crust., Top with remaining whipped cream; sprinkle with toasted coconut. Refrigerate until serving, at least 4 hours. If desired, garnish with cherries and limes.

Since Key limes and Key lime juice can be hard to find, this recipe uses standard lime juice which can be purchased bottled or squeezed fresh. If you can find Key lime juice, bear in mind that Key limes are more tart, so you'll need only half as much juice. This recipe also requires a springform pan.
