This recipe is right off the Hellman's mayonnaise jar. To me, it's so good it rivals my mother in law's potato salad, which I think is the best there is. It's a plain and simple potato salad, but it's delicious! Add pimentos, olives, or green peppers depending on what you like in your potato salad.

1 cup hellman mayonnaise
2 tablespoons vinegar
1 1/2 teaspoons salt
1 teaspoon sugar
1/4 teaspoon pepper
4 cups cubed cooked potatoes (5 to 6 medium)

1/2 cup chopped onion
2 hard-boiled eggs, chopped

Steps:

Combine the first 5 ingredients.
Stir in remaining ingredients.
Cover& chill.

Ingredients

10 large potatos
6 - hard boiled eggs
2 - stalks, celery chopped
1 medium onion, finely chopped
2 cup(s) mayonnaise
1/2 cup(s) sweet relish
1 tablespoon(s) french mustard
- salt and pepper to taste

Steps:

IN A LARGE POT, CUT POTATOES INTO CUBES AND BOIL UNTIL TENDER. THEN DRAIN POTATOES AND PLACE IN A LARGE BOWL, ALONG WITH CHOPPED EGGS, CHOPPED CELERY AND CHOPPED ONION.
COMBINE THE POTATOES, EGGS, CELERY, ONION ALONG WITH MAYONNAISE, RELISH, MUSTARD, SALT AND PEPPER TO TASTE.
GENTLY TOSS INGREDIENTS WITH RUBBER SPATULA UNTIL WELL MIXED. THE REFRIGERATE.

Small yellow, white, or red potatoes are best for potato salad. The potatoes maintain their natural moisture and sweetness this way. If you’re in a pinch, you can chop the potatoes, remember they will take less time to cook. Adding fresh herbs is a nice touch – we like to use a combination of chopped parsley and dill. Parsley, dill, chives, tarragon, and cilantro all work well. Add about two tablespoons of herbs at first then add more to taste. Dill and tarragon are strong, so you may not need the whole 1/4 cup. If you can, try place the salad in the refrigerator for 30 minutes or so before serving. This extra time helps the flavors mingle and makes for a better potato salad.

LOADED POTATO SALAD | JUST A PINCH RECIPES

They had some variation of this at my grocery store, called smashed potato salad, I've also seen it referred to as twice baked potato salad, but in all the deli versions I've seen, the potatoes tasted canned, also used dried chives and fake bacon bits, yuck, but inspired me to create this dish. My family just loves it and begs me to make it for every cook out and summer get together!
