SMOKED VENISON JERKY | MEATEATER COOK

Smoked Venison Jerky | MeatEater Cook image

This savory jerky recipe includes garlic and black pepper to complement the wood-smoked flavors. I prefer to use tender roasts from the hindquarter (like eye of round or top sirloin), but any large hunk of red meat will do. These pieces should be sliced across the grain and marinated for two days to...

Provided by Danielle Prewett

Yield 2 1/2 - 3 pounds

Number Of Ingredients 12

2 1/2 – 3 lb. venison roast
1 cup soy sauce
1/2 tsp. Prague powder #1
3 tbsp. brown sugar
1 tbsp. black pepper
2 cloves of garlic, smashed or minced
2 tbsp. red wine vinegar
1/2 tbsp. dried rosemary leaves
1/2 cup water

Steps:

  • Slice the meat against the grain between 1/8-inch and 1/4-inch thick. This is easier to do when the meat is chilled in the freezer for an hour or hasn’t fully defrosted. Place all the sliced meat in a large, resealable bag.
  • If you have a mortar and pestle, smash the garlic cloves until you reach a rough paste. Mix the garlic with the water, soy sauce, pink curing salt (Prague powder #1), red wine vinegar, black pepper, and sugar until well blended.
  • Pour the liquids into the bag with the meat and mix to coat each piece on both sides. Marinate in the fridge for at least 12 hours and up to two days, tossing and mixing the bag periodically.
  • Prepare a smoker according to manufacturer’s settings using your choice of wood. Pre-heat to 160 degrees.
  • Remove the meat from the marinade and squeeze off excess liquid. Lay each piece of meat on a metal grid or pizza screen. If you have the time and space, let the pieces air-dry for a few hours in the refrigerator so it will absorb more smoke.
  • Smoke the venison for 3 to 4 hours. It should be fully dry but still pliable. If your smoker cannot get below 180 degrees, you can opt to smoke for 1 hour to impart flavor, then switch to a traditional dehydrator set at 145 to finish. This will prevent the jerky from becoming bitter or too brittle.
  • Once completely cool, store in an airtight bag for 1 to 2 months. The jerky can also be refrigerated for 3 to 6 months or frozen for a year.
  • Note: Pink curing salt (also known as Prague Powder #1) is a blend of sodium chloride (table salt) and sodium nitrite. It is used to prevent the growth of botulism bacteria, impart the savory flavors of cured meat, and give it a pink color when smoked. Although it isn’t required, I recommend it if you’re storing the meat for more than a few weeks. Do not use more than a teaspoon per 5 pounds of meat.

VORTEX PLUS – ULTIMATE BEEF JERKY – INSTANT POT RECIPES

Vortex Plus – Ultimate Beef Jerky – Instant Pot Recipes image

Provided by Chop Secrets

Prep Time 250 minutes

Cook Time 180 minutes

Number Of Ingredients 8

1 - 1 1/2 lbs beef round or other very lean cut (trimmed of all fat)
1/2 cup Worcestershire sauce
1/2 cup soy sauce (or low sodium soy sauce)
2 tsp onion powder
2 tsp honey
1 tsp pepper
1 tsp liquid smoke
1/2 tsp red pepper flakes

Steps:

  • Place meat in a zip-top bag and freeze for 1-2 hours to firm up the meat for cutting.
  • Slice the meat against the grain into 1/8 inch - 1/4 inch strips.
  • Mix remaining ingredients in a zip-top bag, then add steak and coat well. Marinate in the refrigerator for 3-6 hours.
  • Remove the meat and pat dry. Divide the steak strips onto the cooking trays in an even layer.
  • Place the drip pan in the bottom of the cooking chamber and insert one cooking tray in the top-most position and one tray in the middle position.
  • Using the display panel, select DEHYDRATE, then adjust the temperature to 160 degrees and the time to 3 hours, then touch START.
  • At 1.5 hours, switch the trays.
  • When the Dehydrate program is nearly complete, test a piece of jerky by bending it at a 90-degree angle.
  • If any moisture seeps out, return for an additional 20-30 minutes. If it bends, but there is no moisture seepage, it is done. If it cracks and breaks, it is overdone.

JACK LINK'S ORIGINAL BEEF JERKY| HOW TO MAKE BEEF JERKEY ...
Using his grandfather’s old recipes for sausage and smoked meats, Jack Link created his first kippered beef sticks in Wisconsin in 1986, and they quickly became a popular snack throughout the state. But that wasn’t enough for Jack, so he invested in a packaging machine to expand into other markets, and eventually—with the help of a successful Sasquatch-themed marketing campaign—Jack Link’s became the #1 jerky brand in the country. Beef jerky is usually made in a dehydrator designed to circulate air around the food at a low temperature. The temperature for drying beef jerky in a dehydrator is typically 130 to 140 degrees, which is a lower temperature than you can reach with a conventional home oven. But that doesn’t mean we can’t use our home oven to make a perfectly acceptable beef jerky hack that tastes like Jack’s. And even though Jack uses a smoker for his beef jerky, you won’t need one to give your jerky a similar smoky flavor. The pineapple juice in the marinade is an important part of the taste, but its primary contribution is a unique enzyme that helps break down the proteins in the tough cut of meat to tenderize it. Soy sauce and beef bouillon contribute to the umami savoriness of the jerky, and liquid hickory smoke is used in this hack as a quick way to add the smoky flavor. The marinating takes 24 hours and the oven drying takes between 6 to 8 hours, so get the sliced beef into the bath in the morning and you’ll be munching on jerky by dinnertime the next day. And to help you out, I'm including step photos. Find more cool recipes for your favorite snacks here.

TURKEY JERKY RECIPE - FOOD.COM - FOOD.COM - RECIP…
This recipe comes from Carol Costenbader's cookbook, "Preserving The Harvest".The turkey is pre-cooked before going through the jerky-drying process, to eliminate the bacterial worries that are associated with raw poultry. This recipe involves a two day process, one day of marination time, and one day of drying time.* As per the reviewer, the fabulous mama's kitchen, the drying time on this recipe has been reduced from what it was as originally posted.
