Cook Time 15 minutes

Yield 6

Number Of Ingredients 14

1 lb preferably cha soba or green tea soba noodles
1 tbsp sesame oil
1 cup broccoli florets
1 cup thinly sliced carrots
¼ cup mirin
1 cup thinly sliced red bell pepper
1 tbsp peeled and chopped ginger
2 tbsp chili garlic sauce
1 cup sweet soy sauce
½ cup sliced on the bias scallions
2 tbsp canola oil
½ cup de-stemmed fresh shiitake mushrooms
16 pieces peeled and deveined shrimps
1 tsp for garnish black sesame seeds

Steps:

  • In a large stockpot, bring water to a simmer. Add the soba noodles and allow them to cook until al dente.
  • Drain the noodles in a colander and cool in ice cold water to stop the cooking process. Drain off the ice water then add the noodles to a mixing bowl.
  • After letting the noodles rest, toss the sesame oil onto the noodles. Using a tong, toss the noodles to coat them thoroughly and set aside while you prepare the rest of the dish.
  • Boil water in a stockpot and season it with salt. Blanch broccoli florets and sliced carrots for about a minute.
  • Drain in a colander and allow to cool in an ice bath. Set aside for later.
  • In a heated skillet, drizzle canola oil. Add shiitake mushrooms and saute. The mushrooms should start to shrink down and caramelize around the edges.
  • Add the shrimp to your mushrooms and cook until shrimp turns a bright salmon color.
  • Add the blanched vegetables and saute for 1 to 2 minutes.
  • Throw in the red bell peppers. Add the sliced scallions to the skillet along with the finely chopped ginger.
  • Pour in the mirin sauce and sweet soy sauce. Saute the ingredients for 1 to 2 minutes. Make sure to coat your ingredients well.
  • Add the noodles to the skillet and stir to coat noodles with vegetables and sauce. Cook until the noodles are caramelized or golden.
  • Serve your noodles in a bowl. Garnish with some thinly sliced scallions and a sprinkle of sesame seeds. Dig in, and enjoy!

PAN-ASIAN CHICKEN WITH KELP NOODLES RECIPE | ALLRECIPES
Not having eaten kelp noodles before, I basically followed one of the recipes on the back of the package of noodles, but before it was nearly complete, I gave it a taste and found it to be bland. I quickly decided to change the flavor direction of the dish, from Japanese, to Southeast Asian, by incorporating a few additional spices. What resulted turned out to be a bold success!

SPICY PAN-FRIED NOODLES RECIPE - NYT COOKING
Garlicky, gingery and as spicy as you dare to make it, this Asian-influenced pan-fried noodle dish comes together in minutes. Most of the ingredients are pantry staples, which means you can make it whenever you need a comforting noodle dish that comes with a bite. If you can’t find the Chinese egg noodles (also called Hong Kong-style noodles), you can make this with rice noodles or soba. The key is to only boil them until they are halfway done. (They should be pliable but still firm in the center.) They will finish cooking when you pan-fry them.

Garnish with cilantro and sesame seeds or peanuts.

CRISPY SHEET-PAN NOODLES WITH GLAZED TOFU RECIPE
Contrasting textures are a signature characteristic of Cantonese chow mein, in which crispy fried strands tangle with tender noodles. Here, that is achieved with the help of a sheet pan and an intensely hot oven. To ensure optimal crunch, start with the pan on the bottom rack to crisp the underside of the noodles, then move it up to the highest to encourage crackly noodles on top, too. Instant ramen noodles are the perfect choice for this recipe because they crisp up flawlessly; just soak them in boiling hot water to loosen them up before sliding them into the oven. The hoisin-marinated tofu is subtly sweet and carries a lot of the flavor in this noodle dish. Quick cooking baby bok choy adds freshness, but you could also use leftover vegetables or seasonal produce. • Remove the sheet pan from the oven (the noodles should be crisp on the bottom and around the edges) and add the bok choy to the pan. Return the sheet pan to the top rack of the oven and bake for 4 to 7 minutes until the greens are vibrant with crispy edges, and the top of the noodles are crispy. Drizzle with the remaining marinade, top with cilantro leaves and serve.
