Cook Time 25 minutes

Yield 4 servings

Number Of Ingredients 10

1 (10 ounce) package fresh udon noodles
½ teaspoon sesame oil, divided, or to taste
2 cups chopped broccoli
½ green bell pepper, cut into matchsticks
2 small carrots, cut into matchsticks, or to taste
½ zucchini, thinly sliced
2 tablespoons soy sauce
2 tablespoons mirin (Japanese sweet wine)
1 tablespoon chili-garlic sauce
¾ teaspoon minced ginger

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook udon in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 10 to 12 minutes. Drain and rinse with cold water. Stir in a few drops of sesame oil.
  • Heat the remaining sesame oil in a large skillet over medium heat. Cook broccoli until bright green and still crunchy, about 5 minutes. Add green bell pepper and carrots; cook and stir until slightly softened, about 2 minutes. Add zucchini; cook until slightly softened, about 2 minutes more. Add soy sauce, mirin, chili-garlic sauce, and ginger; stir to combine. Mix in the noodles; cook and stir until noodles absorb some of the sauce, 1 to 2 minutes more.

  • Make dashi: In a 3.5 to 4-quart donabe or Dutch oven, add 9 cups of cold water and kombu. Simmer over medium heat for 10 minutes. As soon as the water comes to a boil, turn off the heat. Add bonito flakes and let stand for 2 minutes without stirring. Remove the kombu and bonito flakes using a mesh sieve. The kombu and bonito flakes can be reused to make a lighter, but still delicious dashi by simmering in 4 cups of water. Otherwise, discard.   Bring dashi to a simmer over medium heat and add soy sauce, mirin, and salt. Add chicken, squash, mushrooms, and scallion whites. Cook for 6 minutes. Add kamaboko, snow peas, spinach, scallion greens, and eggs. Cook for 2 minutes, gently stirring occasionally. Add udon noodles. Serve with a sprinkle of shichimi togarashi, if you’d like.

BREAKFAST UDON RECIPE - NYT COOKING
This bowl of udon is inspired by the delicate noodle dishes often served as the first meal of the day in Japan. A light, savory broth of dashi, soy sauce and mirin provides a gentle kickstart to your morning. Dashi, a simple seaweed-based stock, is foundational to many Japanese dishes, bolstering the umami flavors of the ingredients and providing balance to the overall dish. If you have 10 minutes and a piece of dried kombu in your pantry, make a quick kombu dashi (see Tip), but in a pinch, a lightly seasoned vegetable stock works, too. The jammy seven-minute egg and wilted spinach are enough to make this dish feel substantial, though you could also add slices of pan-fried tofu, tempura vegetable, seaweed or other hearty toppings to transform this into a complete weeknight dinner.
