Iron Skillet Roasted Mussels | Lodge Cast Iron image

Roast fresh mussels in a flavorful white wine butter sauce until their shells open.

Provided by Sharon Kramis & Julie Kramis Hearne

Prep Time 5 minutes

Cook Time 8 minutes

Yield 6

Number Of Ingredients 7

½ cup of white wine
¼ cup of (½ stick) unsalted butter
1 of leek (white part only), rinsed well and chopped
¼ teaspoon of red pepper flakes
2 of pounds mussels, scrubbed and debearded (discard any that won't close)
3 tablespoons of chopped fresh parsley
of Salt and freshly ground black pepper

Steps:

  • In a 12 Inch Skillet, combine the wine, butter, leek, and red pepper and bring to a boil over medium-high heat. 
  • Reduce the heat to medium, add the mussels, and cover. Cook until the shells open and the mussels are plump, 8-10 minutes; discard any that won’t open. Sprinkle the parsley over the top and season with a dash of salt and pepper. Serve right from the skillet or Dutch oven with sliced bread.

3 ounces Kosher Salt
3 ounces Extra virgin olive oil
1 pound mussels cleaned, debearded and dried
2 ounces butter warm, melted
1 loaf ciabatta bread sliced

Steps:

  • "1. Heat grill to high. Once grill is heated, place a cast-iron skillet directly over the heat. It will need to heat up significantly with the lid closed for 10 minutes. 2. Place mussels in mixing bowl. Toss with olive oil until well coated. Add sea salt and toss again. Put mussels into hot skillet. The shellfish will sizzle and appear to be burning. (This is OK. The smoke comes from the oil and natural juices from the mussels. The salt coats and dries out the mussels to prevent the oil from catching fire and lends additional flavor to the smoke.) It will take 45 seconds to 1 1/2 minutes for the mussels to cook. Each mussel should be completely open. 3. Serve with butter and ciabatta bread."
