Quicker Potato Rolls Recipe: How to Make It image

In this fast recipe, instant mash potatoes help reduce the time it takes to make these tender, taste rolls.—Teri Albrecht, Gaithersburg, Maryland

Number Of Ingredients 9

3-1/2 to 4 cups all-purpose flour, divided
1 tablespoon sugar
1 package (1/4 ounce) quick-rise yeast
1 teaspoon salt
3/4 cup warm water (120° to 130°)
1/2 cup warm milk (120° to 130°)
1/4 cup butter, melted
1/4 cup mashed potato flakes
2 eggs

Steps:

  • In a bowl, combine 1 cup flour, sugar,yeast and salt; set aside. In another bowl, combine water, milk and butter; stir in potato flakes. Let stand for 1 minute. Add to dry ingredients. Add one egg; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 4-6 minutes. Cover and let stand for 10 minutes. Divide dough into 12 pieces; shape each into a ball. Place in a greased 13-in. x 9-in. baking pan. Place a large shallow pan on the counter; fill half full with boiling water. Place baking pan containing rolls over the water-filled pan. Cover and let rise for 15 minutes. Lightly beat remaining egg; brush over rolls. Bake at 375° for 20-25 minutes or until golden brown. Remove from pan to a wire rack.

My dad makes this every week for Sunday dinner and we never get tired of it! He usually doubles or triples the recipe so we can eat them through the week too. This recipe also makes amazing scones, just cut into squares, let them rise and then fry in heated oil. They're good! If you don't have instant potatoes you can use 3/4 cup of mashed potatoes and just forget about the other 1/2 cup of water. Time does not include rising time and serving size really depends on how big you make yours.

Number Of Ingredients 10

1 cup warm water
1/2 cup sugar
1 (8 ounce) package yeast
1/2 cup instant mashed potatoes
1/2 cup warm water
1 teaspoon salt
1/2 cup shortening
2 eggs
2 cups flour
3 -3 1/2 cups flour

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl mix 1 cup of warm water, 1/2 cup sugar and 1 package of yeast. Set aside to soften.
  • In another bowl blend 1/2 cup instant potatoes and 1/2 cup warm water.
  • Add potatoes to the yeast mixture.
  • Add 1 teaspoon salt, 1/2 cup shortening, 2 eggs and 2 cups of flour, beat well.
  • Cover and set aside for 10 minutes.
  • Mix in the remaining 3 to 3 1/2 cups of flour.
  • Knead dough for 5 minutes and place in a well greased bowl.
  • Cover with a damp towel and let rise.
  • When dough has doubled in size, knead it down.
  • Shape as desired, we use about fist sized rolls.
  • Place on lightly greased cookie sheet and cook for about 15 to 20 minutes.

  • Dissolve yeast in hot water. Stir in sugar, salt, shortening, Large eggs, potatoes and 4 c. of flour. Beat till smooth. Fold in sufficient of the remaining flour to make the dough easy to handle. Turn the dough onto a lightly floured board and knead till smooth and elastic, about 5 min. Place in a greased gowl; turn the greased side up. Cover bowl tightly and chill till ready to use. (The dough can be refrigerated for up to 5 days.) If the dough rises, punch it down occasionally. When you want to make fresh rolls, punch down the dough and cut off the amount needed. Shape, brush with butter, cover and let rise in a hot place till double, about 1 1/2 hrs. Heat oven to 400 degrees. Bake rolls about 15 min. Makes 4 dozendinner rolls. Note: Unless I have leftover mashed potatoes, I usually just use instant potato flakes. I add in them with the flour, and increase the liquid as well. (For the brand I use, it's 1/2 c. dry potatoes and 3/4 c. lowfat milk.) I have also tried forming the rolls right after kneading the dough, but they turn out lighter if the dough sits in the refrigerator overnight.
