1 pound cremini mushrooms, roughly chopped 
2 stalks celery, diced 
1 whole carrot, peeled and diced 
1 yellow onion, peeled and diced 
2 thumb-sized pieces fresh ginger, diced 
1 stalk lemongrass, pounded with the back of knife, then roughly chopped 
4 tablespoons canola oil 
1/2 bunch fresh cilantro, leaves roughly chopped 
1 bunch sweet basil, leaves roughly chopped 
3 jalapenos, roughly chopped 
2 heaping tablespoons sambal oelek 
1/2 cup soy sauce 
1 tablespoon sesame oil 
Salt
1/4 cup sambal oelek
1/4 cup soy sauce
1/4 cup apple cider vinegar
1 teaspoon sesame oil
2 tablespoons dark brown sugar
Eggplant
Carrot
Red pepper
Shiitake mushrooms
Fresh spinach
Snow peas
"Dragon" noodles, fresh ramen, lo mein or buckwheat noodles
Lime wedges, for garnish

Steps:

  • For the base: Preheat the oven to 350 degrees F.
  • In a roasting pan, combine the mushrooms, celery, carrots, onions, ginger, lemongrass and canola oil. Bake for 25 minutes.
  • Remove from the oven, transfer into a large pot and add 1 gallon of cool water. Bring to a simmer, then add the cilantro, basil and jalapenos and simmer for 20 minutes. Strain and stir in the sambal, soy sauce, sesame oil, and salt to taste.
  • For the spicy vinaigrette: Whisk together all the vinaigrette ingredients.
  • Toss the desired medley of vegetables with spicy vinaigrette and serve on top of each soup bowl with noodles. Garnish with a fresh piece of lime.

All the ingredients for this weeknight stir-fry are incredibly simple, but when added to the wok, pure magic happens. The result? A bowl of sticky, savoury, caramelised chicken goodness. Fragrant and fabulous… give it a go!

500g (1 lb) chicken thigh fillets, cut into roughly 3cm cubes
4 Tbsp fish sauce
1 Tbsp white sugar
½ tsp cornflour (cornstarch)
1 lemongrass stalk, bruised and white part finely chopped
2 tbsp vegetable oil
5 garlic cloves, finely chopped
1 long red chilli, finely chopped
1 small onion, sliced
1 cup coconut water
1 long red chilli, finely sliced
steamed rice to serve
¼ cup roughly chopped coriander (cilantro) to serve (optional)

Steps:

  • Combine the chicken, fish sauce, sugar, cornflour and half the lemongrass in a large bowl. Leave to marinate for 10 minutes. Heat 1 tablespoon of the vegetable oil in wok over high heat. Add remaining lemongrass, garlic, chilli and onion and stir-fry for a minute. Push all the ingredients to the side to make a space for the chicken. Add the remaining 1 tablespoon of oil and then add the chicken. Spread the chicken out and allow to cook for 2-3 minutes or until starting to brown. Then stir-fry and toss everything together. Add the coconut water and simmer for 5 minutes or until the chicken is cooked through and the sauce has thickened slightly. Serve the chicken with steamed rice and top with coriander leave if using.
