Sweating onions is done to accomplish for several purposes. Sweating gently cooks the onion to soften its texture, increase its sweetness and to reduce the sulfur content, which gives it a milder taste. Sweating onions for dishes, such as risottos, rice pilafs and braised meats is where the flavor begins. The sweat onions give a natural sweetness to dishes. See the instructions below for sweating onions.

Number Of Ingredients 2

1 onion (sliced, diced or rings)
oil (enough just to cover bottom of pan)

Steps:

  • Heat pan over low heat add oil to heat.
  • Add onions and cover to keep onions moist.
  • Remove cover and stir occasionally.
  • Do not allow onions to brown.
  • Cook until the onions are translucent and soft but have not started to brown about 5 minutes.
  • Season with salt pepper and herbs if you desire and proceed with the recipe that calls for sweating onions.

There is a little out of the way bbq joint in between High Rolls and Cloudcroft, NM that made exceptional barbecue. But what I really loved were their onion slices. They were crispy crunchy and ever so sweet! Almost like eating a slice of apple. You WANT this on your pulled pork bbq sandwich! They would never tell me how they did it but I think I figured it out.

1-4 - onions
1 pint(s) half and half

Steps:

  • Peel and slice onions into roughly 1/4" or bigger slices.
  • Place onions in a bowl and pour half and half over onions. Mix well.
  • Cover with plastic wrap. Place in refrigerator for 24 hours.
  • Drain half and half (reserve...it makes a great potato soup) from onions. Rinse onions in cool water drain on paper towels. Serve immediately or put in a plastic bag to use later.
