This Mayo-less Tuna Pasta Salad is the answer if you’re not a fan of mayonnaise and love a cold tuna pasta salad for lunch on a hot summer day.

5 oz canned albacore tuna (drained)
1 tbsp capers (drained)
1 tbsp extra virgin olive oil
1 tbsp red wine vinegar
2 cups arugula
1 cup cooked whole wheat pasta (from 2 oz dry (or GF pasta))
fresh black pepper
1/2 oz fresh shaved Parmesan

Steps:

  • In a large bowl toss tuna with capers, oil, vinegar, arugula, pasta and pepper.
  • Divide on two plates and top with shaved Parmesan.

3/4 cup cooked small pasta shells
1 can (5 ounces) light water-packed tuna, drained and flaked
1 hard-boiled large egg, chopped
1/2 cup cubed cheddar cheese
1/4 cup chopped celery
2 tablespoons pickle relish, drained
1/3 cup mayonnaise
1-1/2 teaspoons Dijon mustard
1/8 teaspoon salt
Lettuce leaves

Steps:

  • In a small bowl, combine the first 6 ingredients. In another bowl, combine the mayonnaise, mustard and salt; stir into tuna mixture. Cover and refrigerate for at least 30 minutes. Serve on lettuce-lined plates.
