A combination of sweet and tart plums will give a more interesting flavor.

Provided by Martha Stewart

Yield Makes 6 cups

Number Of Ingredients 7

4 pounds plums
1 tablespoon sugar
1 teaspoon kosher salt
Freshly ground pepper to taste
1 tablespoon balsamic vinegar
1 tablespoon olive oil
3 tablespoons fresh thyme leaves (about 15 sprigs)

Steps:

  • Heat oven to 250 degrees. Cut plums in half lengthwise and remove pits. Cut halves into 2-inch wedges. Place in a large mixing bowl and sprinkle with sugar, salt, pepper, vinegar, and oil. Toss to coat well.
  • Arrange plums on a parchment-lined baking sheet, cut sides up, about an inch apart. Sprinkle liberally with fresh thyme. Leave to dry in oven 3 hours. Turn off oven, and allow plums to remain inside at least 2 more hours or overnight. Plums will be wrinkled but still quite juicy when done.

12 ounce (1-1/2 cups)s pitted dried plums
2 cups all-purpose flour
1?½ cups sugar
1?¼ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
¾ teaspoon salt
¼ - ½ teaspoon ground cloves
½ cup cooking oil
3 eggs
½ cup sugar
¼ cup all-purpose flour
2 tablespoons butter
½ cup chopped walnuts

Steps:

  • Grease and flour a 3-quart rectangular baking dish; set aside. In a medium saucepan cover dried plums with water. Heat to boiling; reduce heat. Simmer, covered, for 20 minutes or until tender. Drain, reserving 2/3 cup of the liquid (add water, if necessary. Chop plums. Stir together 2 cups flour, 1-1/2 cup sugar, baking soda, cinnamon, nutmeg, salt, and cloves. Add reserved plum liquid and oil. Beat with an electric mixer on medium speed just until moistened. Add eggs; beat 1 minute more. Stir in plums. Pour into prepared baking dish.
  • For the crumb topping, combine 1/2 cup sugar and 1/4 cup flour. Cut in butter until crumbly.
  • Sprinkle cake with crumb topping and nuts. Bake in a 350 degree F oven for 35 minutes or until a toothpick inserted near center comes out clean. Serve warm. Makes 16 servings.

Remove from heat; let stand until plumped, about 10 minutes. Drain plums, reserving fruit and liquid. Measure liquid, adding enough water to yield 1/2 cup. , Cream shortening and remaining sugar until light and fluffy, 5-7 minutes. Beat in egg. In another bowl, whisk together flour, baking powder, baking soda and salt. Add to creamed mixture alternately with reserved cooking liquid; fold in cooled dried plums (batter will be thick)., Transfer batter to a greased 8x4-in. loaf pan. Sprinkle with coarse sugar. Bake until a toothpick inserted in center comes out with moist crumbs, 40-45 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely.
