There's something about a pretty petite glass packed with chocolate layers that takes us back to the days of soda shops, grandma's dessert table, and ice cream parlors. At first we think it's the presentation that pulls us back in time– those enticing stacks of chocolate and whipped cream. One bite in, though, and we know it's the rich, chocolatey flavor that sparks our favorite memories. This Chocolate Parfait will not only take you back in time, but it will also help you treat yourself to dessert on the lighter side. You can use either a regular pudding mix or a sugar-free instant pudding mix. We tried both, and surprising preferred the sugar-free chocolate parfait. It's always a treat when the trick to cutting calories is actually just as tasty.Though we call for whipped topping and grated chocolate, this recipe is versatile. Try layering in fresh fruit to make it your own.

Number Of Ingredients 6

1 (1.4-oz.) package fat-free, sugar-free chocolate instant pudding mix
2 cups 1% low-fat milk
1/2 cup light sour cream
1 (8-oz.) container fat-free frozen whipped topping, thawed and divided
3/4 cups chocolate graham cracker crumbs (4 cracker sheets)
1 tablespoon freshly grated chocolate

Steps:

  • Whisk together first 3 ingredients in a bowl until blended and smooth. Fold in 1 1/2 cups whipped topping.
  • Spoon 1 Tbsp. crumbs into each of 6 (4-oz.) glasses, and top with 1/3 cup pudding mixture. Repeat layers with remaining crumbs and pudding mixture. Top each parfait evenly with remaining whipped topping and grated chocolate. Cover and chill at least 1 hour.

2 (6-ounce) packages fresh raspberries, divided
¼ cup sugar
2 tablespoons fresh orange juice
1 cup vanilla frozen Greek yogurt
1 ounce shaved bittersweet chocolate (about 1/4 cup)

Steps:

  • Combine 1 package raspberries, sugar, and juice in a small saucepan over medium-high heat; bring to a boil. Reduce heat, and simmer 8 minutes, stirring occasionally to break up berries. Place raspberry mixture and remaining package raspberries in a medium bowl; cool 5 minutes in freezer.
  • Place 2 tablespoons yogurt in each of 4 glasses. Top each serving with 3 tablespoons raspberry mixture and 1 1/2 teaspoons chocolate shavings. Repeat procedure with remaining 1/2 cup yogurt, 3/4 cup raspberry mixture, and 2 tablespoons chocolate.
