1-1/4 cups all-purpose flour
1-1/4 cups cornstarch
6-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon Cajun seasoning
1-1/2 cups cold water
1/2 teaspoon canola oil
2-1/2 cups sweetened shredded coconut
1 pound uncooked shrimp (26-30 per pound), peeled and deveined
Additional oil for deep-fat frying
1/2 cup orange marmalade
2 tablespoons honey

Steps:

  • In a large bowl, combine the first 5 ingredients. Stir in water and oil until smooth. Place coconut in another bowl. Dip shrimp into batter, then coat with coconut. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, for 3 minutes or until golden brown. Drain on paper towels., In a small saucepan, heat marmalade and honey; stir until blended. Serve with shrimp.

20 pieces shrimp
0.25 tsp salt
3 oz walnuts
2 tbsp honey
sesame seeds
3 tbsp sugar
2 tbsp water
4 tbsp mayonnaise
3 tbsp sweetened condensed milk
2 tsp lemon juice
4 tbsp all purpose flour
2 tbsp cornstarch
2 tsp baking powder
0.5 egg
7 tbsp water
2 tsp corn oil

Steps:

  • Assuming you're starting with peeled, deveined shrimp (which is what my dad recommends), cut each shrimp in half lengthwise. This will help result in a more beautiful, crunchy fry.
  • In a bowl, we'll mix mayonnaise, sweetened condensed milk, and lemon juice.
  • In a bowl, we'll beat our egg(s).
  • If you don't have honey, or don't want to use honey for whatever reason, you can go with the restaurant route.
  • We'll fill a pan or wok with enough oil to submerge the walnuts, and heat it to around 300F.
  • Read before you start frying shrimp
  • Mix and coat the shrimp with the sauce from earlier, and add the candied walnuts and sesame seeds.
