A sweet switch from the usual cheese ball. Serve with graham crackers or chocolate wafers.

1 (8 ounce) package cream cheese, softened
½ cup butter, softened
¾ cup confectioners' sugar
2 tablespoons brown sugar
¼ teaspoon vanilla extract
¾ cup miniature semisweet chocolate chips
¾ cup finely chopped pecans

Steps:

  • In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners' sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours.
  • Shape chilled cream cheese mixture into a ball. Wrap with plastic, and chill in the refrigerator for 1 hour.
  • Roll the cheese ball in finely chopped pecans before serving.

2 cups pecan halves
2 (12 ounce) bags chocolate chips
25 individually wrapped caramels, unwrapped
2 tablespoons water
½ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange pecans on a baking sheet.
  • Bake pecans in the preheated oven until fragrant and lightly browned, 7 minutes.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Line a baking sheet with aluminum foil; grease with butter.
  • Combine caramels, water, and butter in a saucepan over low heat; cook, stirring occasionally, until caramels are melted and smooth. Fold in pecans.
  • Drop caramel mixture by the spoonful onto the prepared baking sheet. Allow to cool and harden.
  • Drizzle chocolate over caramel nut clusters. Refrigerate to set, about 1 hour.

  • Preheat oven to 400°. In a large saucepan, bring water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand 5 minutes. Add eggs, 1 at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Using a tablespoon or a pastry tube with a #10 or large round tip, form dough into nine 4x1-1/2-in. strips on a greased baking sheet. Bake 35-40 minutes or until puffed and golden. Remove to a wire rack. Immediately split eclairs open; remove tops and set aside. Discard soft dough from inside. Cool eclairs. , In a large bowl, beat milk and pudding mix according to package directions. In another bowl, whip cream until soft peaks form. Beat in sugar and vanilla; fold into pudding. Fill eclairs (chill any remaining filling for another use). , For frosting, in a microwave, melt chocolate and butter; stir until smooth. Stir in sugar and enough hot water to achieve a smooth consistency. Cool slightly. Frost eclairs. Store in refrigerator.

Not only was this super easy to make it was also super delicious! The top has a slight crunch and the inside is soft and creamy. I tried it at room temp when it was slightly warm with a dollop of whipped cream and it was perfect. I also tried it after cooling in the fridge and it's great that way too. You can not go wrong with this lovely chocolate pie recipe.

  • Using either type crust (regular or shortbread) bake at 350 for 30-35 min. ***This chocolate pie does have a "rugged" look because of the slightly crunchy top. Yes, the pie may crack while cooling. Yes, it is a bit hard to tell when the pie is done; and yes, a toothpick will still come out with chocolate on it after 30 -35 min baking time but the pie solidifies while cooling. It does look a little "jiggly" upon taking it out of the oven. Hope this helps with any questions and or concerns.
