4 chicken drumsticks
olive oil as needed
1 (1 ounce) package ranch dressing mix
1 pinch cayenne pepper, or to taste
salt and ground black pepper to taste

Steps:

  • Place chicken drumsticks into a resealable bag; add olive oil to coat. Add ranch dressing mix, cayenne pepper, salt, and black pepper. Close the bag and mix until drumsticks are covered. Let marinate in the refrigerator, 30 minutes to 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the bag; discard marinade.
  • Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 165 degrees F (74 degrees C), 20 to 25 minutes. Remove from the grill and let sit for 5 to 10 minutes before serving.

Chicken Drumsticks with Barbecue Sauce

tablespoons sweet paprika
1 tablespoon fine sea salt
1 tablespoon brown sugar
1 teaspoon dried oregano
1 teaspoon ground black pepper
1 teaspoon chili powder
1½ teaspoon granulated garlic
1½ teaspoon granulated onion
16 chicken drumsticks
¾ cup/200 milliliters barbecue sauce

Steps:

  • In a small, shallow bowl combine all the rub ingredients and mix well.
  • Hold a drumstick by the bone and, using a small, sharp knife, cut around the bony end, cutting through the skin, meat, and sinews. Pull or cut away the skin, sinews, and cartilage from the base of the drumstick. Using kitchen scissors or a sharp knife, cut off the joint at the base. Push the meat toward the top end of the drumstick so the drumstick looks like a lollipop. Wipe away any residue from the bone with a paper towel. Repeat with the remaining drumsticks.
  • Roll each chicken lollipop in the rub, coating it evenly.
  • Prepare the grill for indirect cooking over medium-low heat (250° to 350°F). Brush the cooking grates clean. Place the ETC system with the expansion rack on the grates.
  • Put the chicken lollipops, with the meat facing up, in the rack. Alternatively, thread each lollipop onto a metal skewer. Grill the lollipops over indirect medium-low heat, with the lid closed, for about 15 minutes. Brush the lollipops with some of the barbecue sauce, close the lid, and grill for 15 minutes. Repeat the brush and grill step two more times. They are ready when an instant-read thermometer inserted into the thickest part of the chicken (not touching the bone) registers 165°F, about 1 hour total. They will have turned a nice reddish color from the barbecue sauce. Serve immediately.

You can measure the core temperature with a probe thermometer. In the meantime, prepare the garnish. Remove the stem from the chilli pepper and cut the pepper into thin rings. Pluck the leaves from the coriander and chop finely. Grate some of the lime peel and cut the fruit into wedges. When the specified core temperature is reached, remove the drumsticks from the EGG. Put them on a plate and sprinkle them with the chilli, coriander and lime zest. Serve with the white barbecue sauce and lime wedges to squeeze the juice over the drumsticks. Tip: if your Big Green Egg is heated to 200 °C, we recommend using soaked wood chips. To soak them, leave them in water for about 20 minutes. If your EGG is still warming up, you can use dry wood chips as well.
