English Muffin Bread Loaf Recipe: How to Make It image

Many years ago, a good friend gave me her mother's recipe for this delightful bread, and I've made it ever since. Toast it up for breakfast and don't forget to slather on your favorite jam. —Jane Zielinski, Rotterdam Junction, New York

Total Time 50 minutes

Prep Time 15 minutes

Cook Time 35 minutes

Yield 2 loaves (12 pieces each).

Number Of Ingredients 8

5 cups all-purpose flour, divided
2 packages (1/4 ounce each) active dry yeast
1 tablespoon sugar
2 teaspoons salt
1/4 teaspoon baking soda
2 cups warm whole milk (120° to 130°)
1/2 cup warm water (120° to 130°)
Cornmeal

Steps:

  • In a large bowl, combine 2 cups flour, yeast, sugar, salt and baking soda. Add warm milk and water; beat on low speed for 30 seconds, scraping bowl occasionally. Beat on high for 3 minutes., Stir in remaining flour (batter will be stiff). Do not knead. Grease two 8x4-in. loaf pans. Sprinkle pans with cornmeal. Spoon batter into the pans and sprinkle cornmeal on top. Cover and let rise in a warm place until doubled, about 45 minutes. , Bake at 375° for 35 minutes or until golden brown. Remove from pans immediately and cool on wire racks. Slice and toast. FREEZE OPTION: Securely wrap each loaf in foil; freeze. Thaw at room temperature.

This is an easy yeast bread--no kneading required! The texture is like English muffins, great for toasting.

Yield 2 loaves

Number Of Ingredients 8

2 (.25 ounce) packages active dry yeast
6 cups all-purpose flour
1 tablespoon white sugar
2 cups milk
¼ teaspoon baking soda
½ cup water
1 teaspoon salt
2 tablespoons cornmeal

Steps:

  • In a small saucepan, heat the milk and water until very warm.
  • Combine 3 cups flour, yeast, sugar, salt, and soda in a large bowl. Add the warm milk and water, and beat well. Stir in enough of the remaining flour to make a stiff batter. Spoon into two 9 x 5 inch loaf pans that have been greased and dusted with the cornmeal. Cover, and let rise in a warm place for 45 minutes.
  • Bake at 400 degrees F (205 degrees C) for 25 minutes. Remove from pans immediately, and let cool.
