Rhubarb Jam ~ Three Ways! - Practical Self Reliance image

This simple rhubarb jam has just two ingredients and no added pectin.

2 lbs Rhubarb, chopped into 1/4 inch pieces (about 6-7 cups)
1/2 to 2 cups sugar (see note)

Steps:

  • Mix the chopped rhubarb and sugar together. Allow the rhubarb pieces to macerate in the sugar overnight.
  • Strain the juice from the rhubarb pieces and place the sugar/juice mixture into a jam pot.
  • Bring the juice to a simmer over medium heat and cook for a few minutes until thickened.
  • Add the rhubarb and cook for another 5 minutes until the rhubarb is cooked and the jam thickens to your preference. (You can test consistency on a small plate placed in the freezer.)
  • Pour the jam into prepared canning jars with 1/4 inch headspace. Either store in the refrigerator/freezer for immediate use, or process in a water bath canner for 10 minutes for a shelf stable rhubarb jam.

1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
2 to 2 1/3 cups sugar
2/3 cup all-purpose flour
1 teaspoon grated orange peel, if desired
6 cups chopped (1/2-inch pieces) fresh rhubarb
1 tablespoon cold butter, if desired

Steps:

  • Heat oven to 425°F. Place 1 pie crust in 9-inch glass pie plate.
  • In large bowl, mix sugar, flour and orange peel. Stir in rhubarb. Spoon into pastry-lined plate. Cut butter into small pieces; sprinkle over rhubarb.
  • Cover with second crust; seal and flute. Cut slits in several places in top crust. Cover crust edge with pie crust shield ring or strips of foil to prevent excessive browning.
  • Bake 50 to 55 minutes or until crust is golden brown and juice begins to bubble through slits in crust, removing foil during last 15 minutes. Cool on cooling rack at least 2 hours before serving.
