This is a very tasty mango salsa that is great served over fish. My favorite is any fish blackened with Cajun seasoning and then topped with this salsa. Also great for dipping chips.

- In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.

This is my favorite flavored margarita. It is a beautiful color and really is quite delicious. This uses mango nectar not watered down mango juice - you can find it in your Hispanic section of the grocery store if it is not in the juice section. We drink them all the time during the summer. Use the best quality tequila you can afford.... you will thank me later.

- Rim margarita, hurricane-style glass or cocktail glasses with sugar, if inclined.
- Blend all ingredients in a blender or food processor if using fresh or frozen mango. Otherwise, pour into cocktail shaker and shake.
- Strain into glasses. Squeeze juice from 1 lime quarter into each drink and garnish glass with lime slice.

- Using a fine mesh strainer, rinse rice. Add rice, 1 cup coconut milk, and water to a medium pot and let soak for 30 minutes. Bring pot to a boil over high heat, then reduce to low heat. Simmer, covered with lid slightly ajar, until rice is tender and water has been fully absorbed, 9 to 10 minutes. Meanwhile, in another medium pot over medium heat, bring remaining coconut milk and sugar and salt to a boil over medium heat. Stir until sugar is dissolved and continue to cook until mixture bubbles vigorously and is slightly thickened, about 3 minutes. Pour ½ cup warm coconut mixture over rice and gently stir to combine. Let sit until coconut milk is absorbed and rice has cooled to room temperature, about 30 minutes, up to 2 hours. When ready to serve, place rice on serving dish with mango. Pour remaining sauce over rice and top with sesame seeds.
