HOT & SOUR SOUP (酸辣湯) | MADE WITH LAU

Hot & Sour Soup (酸辣湯) | Made With Lau image

Learn how to make this classic Chinese soup that's equal parts soothing and stimulating!

Provided by Made With Lau

Total Time 30 minutes

Prep Time 10 minutes

Cook Time 20 minutes

Yield 4

Number Of Ingredients 22

2 tomatoes
2 oz carrot
2 oz seafood mushroom
2 oz king oyster mushroom
3 pieces shiitake mushroom
0.25 oz dried wood ear mushroom
2 egg
1 oz red bell pepper
2 pieces green onion
2 pieces dried chili peppers
14 oz tofu
5 cups water
2 tbsp vinegar
1 tsp white pepper
1 tsp salt
1 tbsp sugar
2 tbsp light soy sauce
0.5 tbsp dark soy sauce
3 tbsp cornstarch
2 tbsp water
sesame oil
1 tbsp corn oil

Steps:

  • We don't really emphasize it in this specific video, but my dad is really big on washing his vegetables. So, wash them.
  • In a bowl, mix together cornstarch and water with a spoon until it becomes an even slurry.
  • Set the stove to its highest heat setting, and start to heat up the wok.
  • Cook the diced tomatoes for 30-60 seconds, then add our boiled water.
  • Cover the wok with a lid. My dad opted for a smaller lid, which is supposed to help the wok come to a boil more quickly.
  • Once the wok is boiling, we'll uncover the lid and add more character to our soup.
  • Almost done! Turn off the heat and transfer the soup into a bowl. Garnish with the minced green onions.

  • Toss the prawns through the cornflour mixture. Heat the oil in a large wok or frying pan. When it’s very hot, add the garlic. Sizzle for 10 secs, but don’t let it brown. Add the prawns and any flour and seeds left in the bowl. Stir-fry over a high heat for a few minutes, until the prawns are pink and the sesame seeds are golden. Tip the prawns onto a plate and pour the sauce mixture into the wok. Bubble for a few minutes until thickened. Add the prawns back to the wok and stir to coat in the sauce. TOP SECRET RECIPES | T.G.I. FRIDAY'S SESAME JACK STRIPS
Menu Description: “Golden brown, chicken breast strips coated with crispy Japanese panko breadcrumbs with the extra crunch of toasted sesame seeds and tossed in our famous Jack Daniel's sauce.” Although the original recipe is made from sliced chicken breasts, you may consider using the less chewy tenderloins in this kitchen copy. Packs of fresh chicken tenderloins are sold in most markets and you can also find bags of them in the freezer section. I’m a big fan of the more tender meat in the tenderloins, especially when it comes to chicken fingers. The breading is a simple combination of flour and panko (or Japanese bread crumbs). When the chicken fingers are done frying, gently toss them in the Jack Daniel’s glaze made from my recipe here, and you’ve got a great appetizer than can serve a half dozen finger food fanatics. I've cloned a ton of items from T.G.I. Friday's. Click here to see if I hacked your favorite.  Source: Top Secret Restaurant Recipes 3 by Todd Wilbur.

  • Heat 2-3cm oil in a sauté pan or deep frying pan until hot, and cook each piece of bread (it’s easier to cook one at a time), unspread-side down for 1½ mins, then carefully turn over and cook for 1-2 mins on the prawn side or until the sesame seeds are golden and the prawn paste cooked through. Cut each piece into four triangles. Serve with soy sauce (or a sweet & sour sauce) for dipping, if you like.

SESAME BALLS RECIPE | EPICURIOUS
When we were children, we adored zeen doy(sesame balls). The dough is fried until golden brown so it is both crisp and chewy from the glutinous rice flour. It is eaten year-round, but especially for New Year's and for birthday celebrations. As the dough fries, it expands, so the Chinese believe if you eat Sesame Balls your fortunes will expand similarly.

  • In a 8-inch wide, 5-inch deep pot, heat vegetable oil over medium-high heat until hot but not smoking, about 330 degrees on a deep-fat thermometer. Carefully add 6 sesame balls at a time, and cook over medium heat until golden, 6 to 7 minutes. As the balls float to the surface, begin to press them gently with the back of a metal spatula against the sides of the pot. The balls will expand as they are gently rotated and pressed. Increase the heat to medium-high and fry until golden brown, about 2 minutes. Place on a plate lined with several thicknesses of paper towels. Repeat with remaining sesame balls. Set aside oil to cool before discarding. Serve immediately.
