1/2 pound ground beef
4 hot dogs, cut in half lengthwise and sliced
1 can (16 ounces) baked beans
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared mustard
2 ounces process cheese (Velveeta), cubed
1 frozen deep-dish pie crust (9 inches)
4 slices American cheese

Steps:

Preheat oven to 400°. In a large saucepan, cook beef over medium heat until no longer pink; drain. Add hot dogs, beans, ketchup, brown sugar, mustard and cheese cubes. Cook and stir until cheese is melted., Meanwhile, prick crust with a fork. Bake for 10 minutes. Fill with hot beef mixture. Cut each cheese slice into four strips; make a lattice topping over pie. Bake until cheese is melted, 5-10 minutes longer.

1 lb. ground beef
1/4 c. tomato paste
1 tbsp. yellow mustard
2 tsp. brown sugar
2 tsp. Worcestershire sauce
2 tsp. chili powder
1 tsp. garlic powder
1 tsp. onion powder
kosher salt
Freshly ground black pepper
1/2 c. water
Grilled hot dogs, for serving
Hot dog buns, for serving
Shredded cheddar, for serving
Chopped white onion, for serving

Steps:

Heat a large nonstick skillet over medium heat. Add ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, 6 minutes. Drain fat and return to heat. Add tomato paste and cook until slightly darkened in color, 2 minutes. Add mustard, brown sugar, Worcestershire sauce, chili powder, garlic powder, and onion powder and season with salt and pepper. Stir to combine, then add water and bring to a simmer. Cook until all water is evaporated, 5 minutes. Serve over hot dogs, then top with cheddar and onions.

Preheat oven to 375 degrees. Mix together sour cream, green onions 1 1/2 cups grated cheddar, cumin, and cayenne pepper. Heat canola oil in a skillet over medium heat. Heat enchilada sauce in a separate skillet or saucepan. Using tongs, fry tortillas one at a time, for only about five to ten seconds per side (don't allow to crisp.) Remove from oil, then dunk tortilla in enchilada sauce. Lay tortilla on a plate, then spoon a good two or three tablespoons of the sour cream mixture in the middle. Roll tortilla, then place face down in a 9 x 13 inch baking pan. Repeat with remaining tortillas and sour cream mixture. (If there's any sour cream mixture left over, use it as a dip for tortilla chips!)Cover the dish with the remaining cheese, then bake for 15 to 20 minutes until bubbly. Serve immediately. Place a dollop of sour cream on each serving, then sprinkle on sliced green onions.

Preheat the oven to 350 ̊. Toss the squash, 2 tablespoons vegetable oil, 1/2 teaspoon each cumin and chili powder, the salt and several grinds of pepper on a rimmed baking sheet. Roast, tossing once, until browned and tender but not falling apart, 25 to 30 minutes. Meanwhile, heat the remaining 2 tablespoons vegetable oil in a large skillet over medium heat. Add the onion and cook, stirring it around, until lightly browned and tender, about 10 minutes. Stir in the black beans and the remaining 1/4 teaspoon each cumin and chili powder. Cook until the beans are heated through and well combined, about 2 minutes. Remove from the pan and set aside on a plate. Pour the enchilada sauce into the skillet, reduce the heat to low and warm through. One at a time, hold the tortillas over a stovetop burner over medium heat to brown slightly, about 30 seconds per side. Set aside. Pour 2 cups of the enchilada sauce into a 9 x 13-inch baking dish. To assemble the enchiladas, dip a tortilla into the remaining sauce, then lay on a plate. Sprinkle some cheese down the middle, followed by some of the bean mixture and finally some of the roasted squash. Roll it up tightly, then place seam-side down in the baking dish. Repeat with the rest of the tortillas. If you have any extra pieces of squash, tuck them in between the enchiladas. Be sure to save a little cheese for topping! Pour the rest of the sauce over the enchiladas, then top with the remaining cheese. Give it a final sprinkling of chili powder, then bake until hot and bubbly, 20 to 30 minutes. Remove from the oven and let sit 15 to 20 minutes before serving. Top with cilantro.
