Grilled Za'atar Chicken Recipe | Allrecipes image

Most recipes using za'atar seasoning often incorporate fresh herbs which give the seasoning a green color. I chose to use dry herbs to give a consistent flavor. Most companies now make za'atar seasoning so feel free to use 2 tablespoons za'atar seasoning from Savory Spice Shop® (or other purveyor) or create your own.

2 teaspoons ground cumin
1?½ teaspoons sumac powder
1 teaspoon toasted sesame seeds
½ teaspoon salt
½ teaspoon dried thyme
¼ teaspoon oregano
¼ teaspoon dried marjoram
¼ cup grapeseed oil
2 tablespoons lemon juice
1 pound boneless, skinless chicken breasts, butterflied
nonstick cooking spray

Steps:

  • Combine cumin, sumac powder, sesame seeds, salt, thyme, oregano, and marjoram in a 1-gallon resealable plastic bag. Add grapeseed oil and lemon juice; mix to combine. Add chicken breast, mix with seasoning, and marinate for 30 minutes.
  • Spray the grate of the grill with cooking spray, and preheat the grill to 500 degrees F (260 degrees C).
  • Grill chicken breasts, flipping halfway, until no longer pink in the center and the juices run clear, 7 to 8 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Za’atar is the name for both a traditional Middle Eastern seasoning blend and the pungent green herb that gives the blend its intense, earthy character. The hardy herb, which grows wild, tastes like a combination of oregano, marjoram, summer savory and thyme — all of which can be used as substitutes if dried za’atar isn’t available. As with all spice blends, recipes vary widely depending on the region and the cook, but this one, adapted from Lior Lev Sercarz of La Boîte in New York, includes ground sumac berries for acidity, toasted sesame seeds for their rich, earthy notes, and a little salt as well. Za’atar can be used in marinades for grilled or roasted poultry or meats, mixed into dips, salads and egg dishes, or set on the table to be sprinkled on dishes as a bright and herby condiment.

1 tablespoon/9 grams sesame seeds, preferably unhulled 
3 tablespoons/5 grams dried za’atar (see Note) 
1 tablespoon/10 grams crushed or ground sumac
1/4 teaspoon fine sea salt

Steps:

  • Place a small skillet over medium heat. Add the sesame seeds to the skillet and toast, stirring, until fragrant, 2 to 4 minutes. Pour into a small bowl and set aside to cool.
  • Using a spice grinder, clean coffee grinder, or mortar and pestle, ground the za’atar leaves with the sumac and salt. Add to the bowl with toasted sesame and mix well. Store in an airtight container in a cool, dark place for up to 1 year.

Za'atar Seasoning:

Za'atar seasoning is Middle Eastern Spice blend made with dried thyme, oregano, sesame seeds, and sumac. Store bought Za'atar seasoning sometimes are sold without Sumac. Read the ingredients and if you see sumac missing, buy Sumac for this recipe.

Sumac is a citrus-y Middle Eastern Spice which is as important for Zaatar Chicken Recipe as is Za'atar. Read more about this in my Zaatar Seasoning Post.

Chicken Thighs vs Chicken Breast:

Honestly, any given day I will choose Chicken Thigh for roasting than chicken breast. Where chicken breast is lean, thighs are more-worked-meat of bird. The baked chicken thighs are always more tender and juicy. Plus these are not as expensive as breast meat. To keep'em lean, I get rid of skin.

Note: If you using Skin-On thighs, sear chicken until skin is crisp brown before applying Zaatar Paste and roasting.

Ingredients for Zaatar Chicken are simple and are very easy to find in pantry/fridge. Other than fresh chicken, za'atar and feta cheese, all other ingredient is on the house. How good does that sound?

How To Cook Za'atar Chicken 

Here's how I cook Za'atar Chicken:

  1. I start by marinating the chicken in simple marinade of lemon, garlic and cumin. This simple step enhances the flavor of meat, makes it flavorful throughout not just the outer za'atar seasoned layer. 
  2. I also pan-sear the chicken to lock-in juices. Only the side which get brush of Zaatar. The other side is seared when chicken bakes in oven with Potatoes.

Easy! right?

The best part about this recipe is Chicken and Potatoes bake together. By the time chicken bakes, potatoes are perfectly tender, with delicious juices of chicken, lemon flavor, hint of salty feta. Seriously, I'm a fan!

Tip:If you not planning to bake Zaatar Chicken without potatoes, use a cast iron skillet to sear the chicken. Then, flip chicken cooked side up, apply za'atar paste and bake in same skillet. No need to get out extra sheet pan.
