"Volcano Pancakes" may be a more appropriate name. The pancake will rise a few inches above the pan while baking. My family says the tall sides are the best part. This is fast, simple, and delicious and it's so easy to have the ingredients on hand. I got this from another website and am posting it for my cookbook.

1/2 cup butter or 1/2 cup margarine
6 eggs
1 cup milk
1/4 teaspoon salt
1 cup flour

Steps:

  • Preheat oven to 425 degree F.
  • Put entire stick butter into a 9 x 13 inch pan.
  • Put pan with butter into the oven until butter is melted.
  • Beat the eggs, milk, and salt until frothy.
  • Add flour.
  • Beat until mixed.
  • Pour over melted butter.
  • Bake for 25 to 30 minutes.
  • Serve with syrup or jelly.

Another childhood treat! Don't know where the name came from, but it's so moist and yummy! I spread mine with a cream cheese frosting, due to family request...it's also great without!

Number Of Ingredients 11

1 - duncan heinz yellow cake mix
1 box(es) (small) instant vanilla or coconut pudding mix
1 cup(s) water
1/2 cup(s) vegetable oil
4 - eggs
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) baking powder
NUT MIX
1 cup(s) chopped nuts - i use pecans
4 teaspoon(s) brown sugar - can also use granulated
2 teaspoon(s) cinnamon

Steps:

  • Preheat oven to 350 degree F. Spray or grease a bundt pan. In a large bowl, mix first six ingredients for 5 minutes. Mix nuts, sugar and cinnamon. Sprinkle 1/3 of nut mixture in the bottom of bundt pan. Next, spread half the cake batter evenly into pan. Sprinkle another 1/3 nut mix evenly over batter. Spread remaining batter over nuts and sprinkle remaining nuts on top.
  • Bake for 45 - 50 minutes or until pick comes out clean. Cool and remove from pan onto favorite serving plate. Can glaze if desired.
  • I glazed with a mixture of 1/2 stick butter, 4 oz cream cheese, 1/2 tsp vanilla and two cups confectioners' sugar. Add some milk or cream to thin out to desired consistence!
