The gorgeous fall weather has put me in another baking mood today. I found the Halloween sprinkles in my cabinet when I was digging around for the baking powder. You don't need to add anything to the top, but I think it looks fun and festive.

Number Of Ingredients 7

2 1/2 cup(s) old fashioned oats
2 tablespoon(s) honey
1 package(s) instant vanilla pudding mix, sf
1 1/2 cup(s) skim milk
1 teaspoon(s) baking powder
1 teaspoon(s) cinnamon
1 pinch(es) salt

Steps:

  • Preheat oven to 375 degrees. Prepare a 9x9 square pan with wax paper (optional). Set aside.
  • In a large bowl, whisk together the pudding mix, milk, baking powder, cinnamon, and salt. Mix in the oats and honey.
  • Spread evenly in the pan. Top with sprinkles, nuts, or other toppings if desired. Bake for 30-35 minutes.
  • After allowing to cool, peel away the wax paper and cut into bars.

1/4 cup sugar
2 tablespoons canola oil
1 large egg, room temperature
3 tablespoons honey
3/4 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • In a small bowl, beat sugar and oil until blended. Beat in egg; beat in honey and vanilla. Combine flour, baking powder, cinnamon and salt; gradually add to sugar mixture and mix well (dough will be stiff). Cover and refrigerate for at least 2 hours., Preheat oven to 350°. Drop dough by tablespoonfuls 2 in. apart onto a greased baking sheet. Bake until bottoms are lightly browned, 8-10 minutes. Cool for 1 minute before removing from pan to a wire rack. Store in an airtight container.
