When I married into my husband's family I learned they had a 75 year old tradition each Thanksgiving. It was making Summer Sausage. Not the usual casing sausage, but made with HAMBURGER! We have made oodles of this in our 30 year marriage and now our 3 grown sons do, too. We'll probably be making this 75 years from now...somewhere in our family tree. Venison can be used as well and it's delicious! The ingredients will make several batches of this sausage. The Tender Quick lasts forever.

5 pound(s) ground hamburger (no lean burger)
5 tablespoon(s) liquid smoke (found near barbecue sauce)
5 tablespoon(s) morton salt tender quick (found in dark blue bag in spice aisle)
2 tablespoon(s) coarse ground pepper
2 tablespoon(s) mnced garlic
2 tablespoon(s) mustard seeds

Steps:

  • In a large bowl, mix all ingredients with your hands like making meatloaf. Cover and Refrigerate 24 hours. Take out and knead one more time then make 4 14x2 inch logs. Put them on a cookie sheet with 1-2 inch sides. Bake at 300 degrees for 3 hours. Take out and wrap in wax paper with aluminum foil around that. Refrigerate until well chilled. Serve by slicing and eating alone or with crackers and cheese.
  • NOTE: When rolling logs into shape, make sure you knead the meat and form a tight log so there's no cracks forming while baking.
  • IF USING VENISON: Venison is very lean. This recipe needs some fat in it so use 3 lbs venison and 2 lbs hamburger.

Venison Breakfast Sausage - A delicious spin on classic breakfast sausage made with venison. These venison breakfast sausage patties are going to be your new favorite part of breakfast.

Number Of Ingredients 10

1 pound ground venison sausage
1/4 cup pure maple syrup
2 cloves garlic (minced)
1 teaspoon dried sage
1 teaspoon dried thyme
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon paprika
2 tablespoons oil

Steps:

  • In a medium mixing bowl, combine all ingredients (except for the oil) and mix together using your hands until well combined.
  • Divide the sausage into 1 inch balls and then pat down until they are about 2 inch disks. Transfer to a sheet pan lined with parchment paper until you complete shaping all of the pieces of sausage into disks.
  • In a large cast iron skillet or heavy bottomed pan, drizzle oil and bring to MEDIUM to MEDIUM-HIGH heat. Once the oil is hot, transfer a few sausage patties at a time into the pan and cook for about 2-3 minutes or until the bottom has browned. Flip and cook for another 1-2 minutes. Both sides should be browned but not burnt and cooked through. Transfer to serving dish and cook the remaining sausage patties.
