1 cup white sugar
½ cup butter
2 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
1?½ cups all-purpose flour
3 tablespoons cornstarch
1?¾ teaspoons baking powder
½ teaspoon salt
¾ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x9-inch pan.
  • Beat sugar and butter together in a medium bowl until creamy. Beat in eggs, 1 at a time; stir in vanilla extract and almond extract.
  • Combine flour, cornstarch, baking powder, and salt in another bowl. Add to the creamed mixture and mix well. Stir in milk until batter is smooth. Pour or spoon batter into the prepared pan.
  • Bake in the preheated oven until it springs back to the touch, 30 to 40 minutes.

2 tablespoons Land O Lakes® Butter
1/4 cup all-purpose flour
1 large Land O Lakes® Egg (yolk only)
2 tablespoons sugar
1 tablespoon 2% or whole milk
1 teaspoon vanilla extract
1/4 teaspoon baking powder
1 teaspoon decorator sprinkles
Topping
Vanilla ice cream or whipped cream, as desired

Steps:

  • Place butter into 12-ounce coffee mug; microwave 30-45 seconds or until melted. Add all remaining cake ingredients except sprinkles; mix well with fork. Stir in sprinkles.
  • Microwave 45-60 seconds or until cake pulls away from sides and top is dry. (Do not overcook.) Cool 1 minute. Top with vanilla ice cream or whipped cream, as desired. Serve warm.

Preheat oven to 350° and grease and line two 8” round cake pans. In a large bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.  In another large bowl, with a hand mixer, beat together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in strawberry compote and vanilla until fully incorporated, then add milk. Add dry ingredients, mixing until just combined. (If you want a super pink cake, stir in some pink food coloring.) Make frosting: In a large bowl using a hand mixer, beat cream cheese and butter until no lumps remain, then beat in strawberry compote. Add powdered sugar and beat until fully incorporated. Add vanilla and a pinch of salt. If your frosting is too loose, refrigerate for 20 minutes before frosting the cake.  Spread a thick layer of frosting on top of one cake layer. Top with second layer of cake, then frost all over sides and top. Garnish with fresh strawberries, if using.
