peanut oil
3 tablespoons olive oil
1 packet (1 ounce) Hidden Valley® Salad Dressing & Seasoning Mix
2 pounds chicken wings
½ cup Buffalo Dipping sauce
2 tablespoons butter
2 tablespoons Hidden Valley® Original Ranch® Dressing

Steps:

  • Preheat frying oil in a large Dutch oven to 350–360°F.
  • In a large plastic zipper bag, combine olive oil and seasoning mix. Place chicken wings into the bag and shake vigorously to combine and coat the wings, then allow to marinate in the refrigerator while the oil comes to temperature.
  • Working in batches, adjusting the stove temperature as needed to maintain a consistent cooking temperature of 350°F, carefully lower the wings into hot oil and fry until cooked through, 7 to 8 minutes. Place the cooked wings on paper towels to absorb excess oil and keep warm.
  • In a small bowl, combine Buffalo wing sauce with melted butter and dressing. Serve the dipping sauce, and more Ranch dressing, if desired, alongside the fried hot wings

½ cup flour
1 tablespoon Hidden Valley® Original Ranch® Salad Dressing and Seasoning Mix Shaker
2 tablespoons baking powder
4 pounds chicken wings
1 cup sour cream
1 cup mayonnaise
1 (1-ounce) Hidden Valley® Original Ranch® Buttermilk Recipe Seasoning Mix Packet

Steps:

  • Preheat oven to 450°F. Cover a baking sheet with foil and spray with cooking spray.
  • In a large bowl, whisk together flour, seasoning mix and baking powder. Add chicken and coat with the flour mixture. Arrange on baking sheet.
  • Bake for 30–35 minutes, turning once after about 20 minutes.
  • While the chicken cooks, make the dipping sauce by stirring the sour cream, mayonnaise and buttermilk seasoning together. Serve hot chicken wings with the dipping sauce.

This originally came from a pamphlet from HVR. It required a ridiculous amount of butter to be added and I figured chicken wings have more than enough fat without adding more, so I skipped it. It also required paprika to sprinkled on top so I skipped that as well. I increased the hot sauce by a whole lot as well. If you can find the light version of HVR dressing mix, use that. If you don't want to use chicken wings you can use an equal amount of breast strips. Boneless and skinless are best. I get requests for these wing any time I'm invited to a pot luck. Thirty minutes of the prep time is for marinating.
