Victoria's restaurant (Randolph, VT), which calls itself 'A Turn of the Century Restaurant,' prepares a cream pie that has the flavor of Irish whiskey and coffee.

CRUST:
1 cup(s) graham cracker crumbs
1/4 cup(s) butter (1/2 stick), melted
FILLING:
1/4 cup(s) instant coffee
2 tablespoon(s) hot water
3 cup(s) whipping cream
1/2 cup(s) powdered sugar
1 tablespoon(s) powdered sugar
6 tablespoon(s) irish whiskey
6 tablespoon(s) kahlua
- shaved chocolate, garnish, optional

Steps:

  • For crust. Preheat oven to 375F.
  • Combine crumbs and butter in small bowl.
  • Press into 9-inch pie plate.
  • Bake until set, about 8 minutes.
  • Cool completely.
  • For filling; Dissolve coffee in water.
  • Combine all ingredients except garnish and beat on medium speed until mixture holds peaks.
  • Pour all but 1/2 cup into crust, spreading evenly.
  • Spoon remaining filling into pastry bag fitted with rosette tip and pipe frill around rim.
  • Garnish with shaved chocolate.
  • Chill thoroughly, 4 hours or overnight.
  • Serve chilled.

Sugar substitute equivalent to 1 cup sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
8 cups thinly sliced peeled tart apples
1 tablespoon butter
Dough for double-crust pie

Steps:

  • Preheat oven to 375°. In a large bowl, combine the first 3 ingredients; fold in apples. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake 35 minutes. Increase oven setting to 400°; bake until apples are tender, 15-20 minutes.
