Healthy chicken salad recipes for weight loss image

This Fancy Chicken Salad is a fresher and lighter version of the classic creamy chicken salad. It keeps well so it's great for meal prep.

Number Of Ingredients 11

1 lb cooked chicken breast meat seasoned and placed on top of
2 cup seedless red grapes halved
1 cup finely chopped celery (from two to three sticks),
1/2 cup of finely diced onion (one medium-sized onion) topped
1 cup pecans which have been coarsely chopped
1/2 cup mayo
1/2 cup sour cream or plain Greek yogurt
2 tbsp lemon juice
2 tbsp dill finely chopped
1/2 tbsp salt or to taste
1/2 tbsp black pepper

Steps:

  • While the skillet is heating up, chop pecans on a cutting board and place them in a bowl. Place this bowl aside to cool for 3-5 minutes until they become fragrant then transfer back into the same dry skillet over medium/low heat and toast again until golden brown before removing from heat altogether.
  • In a large mixing bowl, toss together diced chicken, halved grapes, sliced celery and chopped onion. Top with cooled pecans then drizzle honey mustard dressing over the top before serving.
  • To make the dressing, combine all of the ingredients in a small bowl and stir to mix well.
  • For the best flavor, make sure you add all of your favourite dressing to this salad. You can also adjust it based on what tastes good for each person! Make sure to put in lots of toppings and stir everything together so that every bite is delicious. Once done chilling in the fridge, serve up a bowl or two before everyone else gobbles them down.
