400 grams unbleached, whole Pastry flour
Pastry flour (for working the dough)
0.5 packet Dry yeast
salt
0.5 teaspoon sugar
freshly ground peppers
30 grams softened butter
60 grams Orange marmalade
2 teaspoons mustard powder
1.5 boneless Prague ham
clarified butter (for cooking)
Whipped cream

Steps:

  • Mix together the flour, yeast, 1 teaspoon salt, sugar, and pepper with 270 ml (approximately 1 cup) of lukewarm water and butter with the dough hook of an electric mixer to form a soft dough. Cover and let rise for about 30 minutes.
  • Mix the marmalade with mustard powder.
  • Sear the boneless ham on all sides in butter in a large, nonstick skillet over medium heat for about 10 minutes. With a sharp knife, score the meat in a diamond pattern. Remove the meat from the pan and spread the surface with the mustard mixture, then set aside. Roll out the dough on a floured surface to an adequate size so that the meat can be wrapped with the dough.
  • Line a baking sheet with parchment paper. Wrap the ham in the dough and place with the seam down on the sheet. Let the ham sit for 20 minutes. Preheat the oven to 190°C (approximately 375°F). Brush the dough with some cream. Cut a hole in the middle of the dough and bake in the oven for 30 minutes, until golden brown. After baking, turn off the heat open the oven door slightly and let the roast sit for an additional 10 minutes. Slice and serve on plates

0.5 cube fresh Yeast (21 grams) (approximately 3/4 ounce)
1 tablespoon sugar
75 grams Sourdough
2 teaspoons salt
500 grams Rye flour
1.5 kilograms lean ham
Rye flour (for dusting)

Steps:

  • Dissolve the yeast in 350 ml (approximately 1 1/2 cups) lukewarm water with the sugar. Combine the flour, starter and salt and mix until combined. Make a well in the center, add the yeast mixture and knead until smooth. Transfer to a lightly floured work surface and knead with your hands until the dough is no longer sticky. If necessary, add more water or flour. Return to the bowl, cover and let rise for about 1 hour in a warm place.
  • Rinse the ham and pat dry. Knead the dough on a floured surface then roll out until 1-2 cm (approximately 1/3-3/4 inch) thick. Place the ham in the center and wrap the dough over the ham, pressing down lightly to adhere. Place on a baking sheet lined with parchment paper and sprinkle with flour. Cover and let rise for 30 minutes.
  • Preheat the oven to 220°C (approximately 425°F). 
  • Bake for 60-70 minutes.
  • Remove from the oven and serve sliced, warm or cooled.
